Originally posted May 4, 2012: I am totally aware that Cinco de Mayo is mostly just an excuse for Americans to make a bunch of Mexican-inspired food. And yes, I realize that most of that food is very Americanized. But I am totally ok with that, because I love any excuse to make tasty food!!

MY LATEST RECIPES

I am a taco lover, and have about a million taco recipes here on Taste and Tell, but what is better to wash that taco down than a margarita? Or should I say a Virgin Frozen Margarita!! This is a fun and festive mocktail recipe that is perfect for Cinco de Mayo or for Taco Tuesday. Or for New Year’s Eve or even a girls night! I love a good mocktail, and these are at the top of my list!

Virgin Frozen Margaritas recipe

I don’t drink alcohol, but that is not a reason to not have a festive drink for the holiday! These Virgin Frozen Margaritas come together in just minutes, and both kids and adults would love them! They are a bit tart from the lime and a bit bitter from the grapefruit juice, but combined with the sugar-rimmed glass, it all just came together perfectly. I can’t tell you how it compares to an actual margarita, but I know I’d be happy sipping one of these alongside my tacos and chips and salsa!

I originally posted this Virgin Frozen Margaritas recipe alongside my Cherry Empanadas. These are a great knock-off of a dessert I love from a fast food restaurant. And the perfect dessert for Cinco de Mayo. Combine those empanadas, this virgin margarita recipe, and your favorite taco or enchilada recipe, and you are ready for the perfect Mexican-inspired dinner.

Virgin Frozen Margaritas

Virgin Frozen Margaritas Recipe

A little bit tart, a little bit sour, and a little bit sweet, these Virgin Frozen Margaritas come together in just minutes and are super family friendly!

Ingredients

  • Lime wedge
  • Coarse sugar
  • 1 (6-oz) can frozen limeade concentrate
  • 3/4 cup orange juice
  • 2/3 cup unsweetened grapefruit juice
  • 4 cups ice cubes

Instructions

Place the sugar on a shallow plate. Rub the edge of 4 glasses with the lime wedge, then dip the rims in the coarse sugar.

Combine the frozen limeade concentrate, orange juice, grapefruit juice and ice cubes in a blender and blend until slushy.

Pour into the glasses to serve.

    I have really missed margaritas since I’ve been pregnant! This sounds like it might be just the thing, especially since I’m due at the end of Summer and have to get through the Florida heat!
