Mini Cheese Meatloaves

When I married my husband, he informed me that there are only a few things that he does not like to eat. On that list was meatloaf. But the problem with this is that I love meatloaf. But over the years, I have learned that sometimes, I just need to make something that I want, and usually, he’ll just eat it, too. So that is what I decided to do.I had come across this recipe for these mini meatloaves, and since everything seems to be better when it’s mini, I decided to try them. The recipe makes 8 meatloaves, 4 servings. I halved the recipe, not knowing if my husband would even eat. Well, eat them he did. And he loved them!! In fact, after he ate 2, I ate 1 1/2, and Abbi ate 1/2, I think we were all still hungry! Not only did I convert him to meatloaf, but he cleaned his plate as well! (I do have to mention that I think he must just have a mental block against meatloaf, because I made it before, and he liked it then, too…)
Mini Cheese Meatloaves
adapted from Recipes from River ViewServes 4
prep time: 10 minutes
cook time: 45 minutes
total time: 55 minutesMeatloaves
1 egg
3/4 cup milk
1 cup shredded cheese
1/2 cup quick cooking oats
1/4 – 1/2 cup breadcrumbs
1/2 cup chopped onion
1 teaspoon salt
1 pound lean ground beefSauce
2/3 cup ketchup
1/2 cup packed brown sugar
1 1/2 teaspoon prepared yellow mustardPreheat oven to 350F. Grease a 9×13 baking dish.
In a bowl, beat the egg and milk. Stir in the cheese, oats, 1/4 cup breadcrumbs, onion and salt. Add beef and mix well. Add more breadcrumbs if needed to be able to form loaves. Shape into 8 small loaves, and place in a greased 9×13 baking dish.
In a small bowl, mix ketchup, brown sugar and mustard. Spoon over loaves. Bake, uncovered, for 45 minutes or until meat is no longer pink.

Mmm, I love meatloaf! I like to stick the mozzarella string cheese sticks in the centers. All that gooey cheese is such a yummy surprise!

Don't you love it when you can convert your loved one into trying something they swear they don't like? I've had to result to bait and switch on my husband a few times. It makes me laugh when I reveal my secret ingredient as something he says he won't eat! My meatloaf recipe is my #1 most viewed of all…but when I posted it, so many people say they didn't like meatloaf. We love it, and I don't know why I haven't made mini versions. Too cute!

Everything is definitely better in mini form. Your husband must just have had some traumatic experience with meatloaf as a child and has bad associations. These look delicious. I don't see how anyone could resist!

These mini loaves sound great! Meatloaf is probably my hubby's most requested meal, so I may just have to try these out on him. Unfortunately, I don't think I'll ever get him sold on one of my favorite meals, a nice bowl of slow-cooked beans with ham, no matter how many times I make them. But I can keep trying!

Indeed everything does seem to be better as a mini and your meatloaf is no exception. So glad the hub enjoyed it. I put oats in my meatloaf too!!! Tonight, I'll be making some stuffed peppers. I think I'll follow your recipe and add lots of cheese!!!

I can't imagine not liking meatloaf. It has always been a favorite of mine. There is a fair amount of cheese in these little mini loaves. I bet they were delicious.

i don't think i've ever seen cheese in a meatloaf recipe, but it makes perfect sense and it also makes it that much more appealing! great recipe, deborah.

I found this because you linked to our recipe from http://www.potterymonster.com (pasta e fagioli). I have had a pound of grass fed beef in my freezer just waiting for the right recipe and I think this is it. Thanks for the dinner idea.

I found this recipe while doing a mini-meatloaf search. I just made it this evening and the little meatloaves were a hit! I also added a half cheese string to the centre of each. Thanks so much for sharing! I'll be making these again in the future for sure.

This is the exact recipe I use. I am a lifelong meatloaf hater, but this is the ONE I will eat!
I was given a hard time about this recipe a long time ago on a food discussion group…but I still stand behind it, proudly!!
I've made it before with breadcrumbs and panko instead of the oatmeal (I might have even used regular ole bread), and it always turns out fantastic!
