I am not usually a very trendy person. When it comes to fashion, I keep things pretty classic. And when it comes to food, I tend to usually stick to my favorites, my comfort zone.
But folks – there is a new smoothie trend, and I’m jumping on that train.
Smoothie bowls.
I’m sure you’ve seen them. Everywhere. And I can totally see why.
We already know that I’m a smoothie fan, because here we are, celebrating the release of my new cookbook – Best 100 Smoothies for Kids. But today, I’m here to prove that smoothies aren’t just for kids. Because you’re gonna want this Coconut Berry Smoothie Bowl!
I’m a huge believer in that we eat first with our eyes. And it doesn’t get much prettier than this smoothie bowl!
You are basically putting your smoothie in a bowl, and then topping it with all kinds of goodies. The berries are so good right now, so I had a ton of them on hand. And I love the addition of the unsweetened coconut flakes to bring in another texture. I was going to throw on some flax seeds for some added nutrition, but of course, when I went to photograph this, my flaxseeds were nowhere to be found. But know that they are a great addition to a smoothie bowl!
I used a combination of frozen strawberries, blueberries, blackberries and raspberries in my bowl, but feel free to throw in whatever frozen berries you have on hand. You can’t go wrong! And I use one of my favorite smoothie tricks that I have been using for the last few years – underripe bananas. I love the creaminess that frozen bananas add to smoothies, but not always the overwhelming banana flavor. If you freeze your bananas before they get ripe and super sweet, you get that creaminess without the flavor. So I always have 2 kinds of bananas in my freezer.
I’m loving that I can eat my smoothie with a spoon instead of a straw, and sense lots more smoothie bowls in my future!

Coconut Berry Smoothie Bowl

Description
Because mornings shouldn’t be boring – start your morning off with this Coconut Berry Smoothie Bowl that tastes as good as it looks!
Ingredients
- 2 cups coconut milk beverage
- 3 cups frozen mixed berries
- 1 frozen underripe banana, sliced
- fresh berries and unsweetened coconut, for topping
Instructions
- Pour the coconut milk beverage into a blender. Add the frozen berries and banana and blend until smooth.
- Divide the smoothie between 2 bowls. Top with fresh berries and unsweetened coconut. Serve immediately.
Recipe Notes:
By using an underripe banana, you get the creaminess that a frozen banana brings without an overpowering banana flavor.
