Cookbook of the Month Recipe – Roasted Salmon with Sweet-N-Hot Mustard Glaze

I can’t decide if I love craigslist or hate it. I find things on there all of the time that I might be interested in, but sometimes the hassle of driving to check them out is just not worth the effort. I have been obsessed with everything baby lately, especially since I am hitting the half way mark tomorrow. And being the frugal person that I am, I have been searching high and low for a good deal on the many things I need to buy before the little one comes. On Thursday, I ran across an ad for a new Pack-n-play for almost half of what this woman had bought it for just a few months ago. It was the best bargain I had found so far, especially being new, so I jumped on top of the deal. The only problem was that I had to drive to another town, about 40 minutes away, to pick it up. I left after work, hoping to have time to pick it up, stop at the grocery store, then make it home in time to make dinner.
I picked up my new purchase and was excited to have bought the first “big” item for my baby. I stop at a grocery store on my way home, only to find that they did not have 2 of the 3 items I needed to make my cookbook of the month recipe. By this time, it was already getting late, and it was already later than we usually eat dinner, so I decided to postpone the cookbook of the month recipe, which I always post on Fridays, to Saturday.
Well, things still didn’t go quite as planned when I went to make this. I am having a hard time finding hot mustard powder, and I realized when I started making this that I didn’t have enough Dijon mustard, so I improvised. I used stone ground mustard for part of the Dijon, which was actually a good decision because it brought in some of that “hot” that I was missing from not having hot mustard powder. This wasn’t a blow-your-socks-off meal, but for something that was on the table in less than 30 minutes – I ate and enjoyed every bite!
It’s also a new month, so this month’s cookbook of the month is Robin Miller’s Quick Fix Meals. I found it on clearance a few days ago, so cheap that I couldn’t pass it up. I’ve only watched her show a handful of times, but I do know that she cooks once, and then uses part of that meal throughout the week. I’m going to be changing up the recipes a bit for a few reasons. First, because I don’t like to eat the same protein for dinner all week long. I like chicken one day, beef the next, then pork, etc. I get bored with the same thing over and over. I plan on following the recipes as written one day when I get a big freezer, because her way of cooking really does save time and effort. But just know that these recipes will not be following her method!
Roasted Salmon with Sweet-N-Hot Mustard Glaze
adapted from Quick Fix MealsServes 2
2 – 4-oz salmon fillets
salt and freshly ground pepper
1/8 cup Dijon mustard
1/8 cup stone ground mustard
1/4 cup honey
1/2 tablespoon water
1/4 teaspoon mustard powder (use hot if you have it!)
1/4 teaspoon garlic powder
1 tablespoon chopped fresh dill
lemon to serve withPreheat oven to 400F. Coat a shallow baking dish with cooking spray. Salt and pepper both sides of salmon and place in the prepared baking dish.
In a medium bowl, whisk together both mustards, honey water, mustard powder and garlic powder. Reserve 1/4 cup of the sauce, and pour the remaining sauce over the salmon. Roast the salmon until fork tender, about 12-15 minutes.
Serve the salmon with the remaining sauce and sprinkle each fillet with the dill. Serve with lemon slices.

I am with you about Craig’s list. Sometimes the stuff you find there is just not worth even the drive. In the other hand, I found pretty good and cheap stuff on ebay. You just need to look and look and look and keep looking :-p

Ok – I love you!! My hubby just got home from Alaska with 100lbs of Fish – Salmon and Halibut so your timing on this recipe is perfect!! This will be on our dinner plate next week!!

congrats on reaching the half-way point! my only experience with sweet-n-sour sauce was when i was kid, eating chicken mcnuggets at mcdonalds…perhaps it’s time for a grown-up version.

Salmon is always a good choice. And a sweet hot mustard glaze sounds great. Take it easy with all the running around sometimes you may have to trade frigality for convienance.

How did I miss this post? First, congrats on your first big baby purchase. Is my foggy memory correct that a Pack-n-play is a playpen type device? We used ours when we traveled as a crib for the wee one. Hope you and the pending babe enjoy it!
Next, the recipe looks soooo good. I love that glaze. It really does sound sweet and hot! YUM!
