This is my last week of work, and I couldn’t be more excited!! I am so proud of my husband and how hard he has been working. And I’m so excited that I’ll be home all day starting next week, just in time for the holiday season and holiday baking!!Many of you know that while I’ve been working, I’ve been on the search for super simple supper ideas. And of course, when I think of nights short on time, my mind goes to the slow cooker. Now, I’ve said this before, but I have a love/hate relationship with the slow cooker. Generally, I really don’t like the texture that you get from meat that has been in the slow cooker all day. I’m better off if I can be there to monitor it, and if it is getting too “well done”, then I can take it out. Well, that kind of defeats the whole purpose of the slow cooker, doesn’t it!?! So I tend to do a lot of soup in the slow cooker, because those seem to work out the best for me.This soup was the perfect slow cooker meal. Although the sausage did lose a little bit of it’s texture being in the slow cooker all day, I love how it flavored the broth of the soup. And this is super healthy, to top it off!! I had to cut up a few vegetables in the morning, but I was easily able to throw this together before work. I’m so glad I had a slow cooker success!!Sausage and White Bean Cassouletadapted from Southern Living 2007 Annual Recipesserves 6Prep time: 10 minCook time: slow cooker 8 hours2 (16-oz) cans Great Northern beans, undrained1 (28-oz) can diced tomatoes, undrained1 (14-oz) package smoked turkey sausage, sliced3/4 cup chicken broth3 medium carrots, sliced1 cup chopped onion2 garlic cloves, minced1/2 teaspoon salt1/2 teaspoon dried thyme1/4 teaspoon pepper1 bay leaf1/4 cup freshly grated Parmesan cheeseCombine first 11 ingredients in a 5-quart slow cooker.Cover and cook on low for 8 hours or until vegetables are tender. Remove and discard bay leaf.Sprinkle each serving with Parmesan cheese before serving.

I am guilty of letting my slow-cooker hide out in the back of the basement most of the time. I am thinking this recipe might allow it an escape to the kitchen.Love the combo of sausage and beans (especially the use of turkey sausage). And just hearty enough to ward off the coming chill. Bookmarked.

I used to love the slow cooker as well, but like you I'm getting a bit too picky to use it that frequently. This cassoulet does sound delicious though and definitely warrants breaking it out!

Ohhh wonderful! I have recently decided to do soup once/week on Sundays (SO great for lunches throughout the week) and this one looks like a keeper! Plus – I LOVE my slow cooker! Thanks for sharing

lately i've been all about the crockpot. i love sitting down at five to eat without spending an hour slaving for it. this looks great, and congrats on getting to stay home, you picked a good time!

Yay for being at home. I semi wish I could be home or work from home.
I feel the same way about the slow cooker. What I need to do is get a "fancier" one. One that I can control the time & heat level better.
