  • Corn-Sausage Chowder

    I know it is feeling like spring here, but I’m one who loves to eat soup year round. Especially in the late summer/early fall – when all of the garden produce is really good. And even though this is more of a cold weather soup, I know that even though the weather here has been nice, we still have a few chilly days in store that this would be perfect for!

    I wasn’t going to post about this soup because the photo isn’t that great, but the way my husband ate this up – I knew I had to share!! I actually was worried that he wouldn’t like this one because it has potatoes, and he’s not the biggest potato fan. But I believe we had the whole batch of this eaten up within 24 hours!!

    Corn-Sausage Chowder
    adapted from Better Homes and Gardens – Our Best Recipes

    Makes 6 servings

    1 lb. bulk pork sausage
    2 medium onions, coarsely chopped
    3 cups potatoes, cut into 1/2 inch cubes
    2 cups chicken broth
    1 teaspoon salt
    1/8 teaspoon pepper
    1 15 1/4-ounce can whole kernel corn, drained
    1 14 3/4-ounce can cream-style corn
    1 12-ounce can evaporated milk

    In a 4- to 5-quart Dutch oven, cook sausage and onion until sausage is browned and cooked through. Drain well.

    Stir in potatoes, broth, salt, and pepper. Bring to a boil and then reduce heat. Cover and simmer for about 10 minutes or until potatoes are tender.

    Stir in both cans of corn and evaporated milk. Cook until warmed through.

    Garnish with chives if desired.

  4. its not that bad of a photo!! But I know what you mean about monocromatic foods just not looking right..
    This soup looks really yummy.. kind of looks like the Olive Garden one with the kale. (I love that soup!!)
    I’ve recently become a big fan of sausage in soup.. my mother in law makes a really good one with sausage and lentils.. yumm! :)

  8. I love soup year-around too; in the summer I crank up the AC so I can really enjoy it :) . I’ll have to keep this one on tab. I need to really try adding soup to sausage!

    Our California weather is so weird! We’ve had lots of sun, and now cold and rain is expected for the weekend. This soup sounds perfect. I love corn and it gives dishes such a pretty color. I always keep turkey sausage on hand, so this looks like a match!

  17. I love the photo! And I love this chowder! My hubby is a big fan of corn chowder, and I just know he’d gobble this up! The weather here is still bizarre, so this is perfect. Plus, unlike many chowders, this one is gluten free! Yeah! So glad you posted this! YUM!

    I love corn chowder, a little too much. That is why I only make it when corn is in season, other wise I would have to grow a third thigh just to hold all the calories. ;)
