Serve it up with a simple green salad and Cheesy Garlic Bread for a family friendly dinner that is perfect for any night of the week.

Ingredients
- Sausage: This adds tons of flavor to the dish. I like to use sweet Italian sausage, but if you want some heat, you can swap in hot Italian sausage.
- Seasonings: I only add some garlic powder and salt. If you are sensitive to salt, though, I would leave that out. The sausage tends to be salty on its own.
- Boursin Cheese: This is the ingredient that sets this recipe apart. It adds flavor, but it adds a delicious creamy element to the pasta dish.
- Cheese Tortellini: You want to use refrigerated cheese tortellini. You could also use another flavor of tortellini, but the fresh, refrigerated pasta is what you are looking for. You don’t want to use frozen tortellini, as it won’t cook the same in the sauce.
- Spinach: This adds freshness, a little extra flavor, and well as a boost in nutrition.
- Marinara: If I’m going for super easy, which I usually am when I make this recipe, I will use jarred marinara sauce. If you have some extra time on your hands, you can make homemade marinara.
- Mozzarella: The mozzarella just adds an extra bit of cheesiness at the end.

How to Make Sausage Tortellini Bake
STEP 1: Cook your sausage. I just cook it in a skillet, breaking it up as it cooks. This step can be done ahead of time, if needed.
STEP 2: Now you start to layer! Place the Boursin cheese at the center of a baking dish that has been oiled. Then place the tortellini around the cheese.
STEP 3: Chop the spinach, or if you want to keep things easy, you can just tear the spinach right as you put it on top of the pasta. You could also use baby spinach.
STEP 4: Take the sausage that you cooked earlier and place it over the spinach.

STEP 5: Now take the marinara sauce and pour it over the spinach. I like to spread it evenly over once it is added, just to make sure everything cooks evenly.
STEP 6: Cover the dish tightly with foil, and bake for 30 minutes.
STEP 7: Remove the foil from the dish, then stir everything together. You want to make sure you break up the Boursin, mixing it evenly in with everything.
STEP 8: Sprinkle the mozzarella over the top, then return the dish to the oven. Bake until the cheese has melted.

Tips and Tricks
I like to serve this with some fresh basil over the top, just for freshness. You can skip this if you don’t have any on hand.
If you can’t find Boursin cheese, you will just want to use another soft, herbed cheese.
If you want to prep some of this ahead of time, I would not suggest layering it until you are ready to cook. The tortellini might get too soggy.
The leftovers are great, though. Refrigerate any leftovers for up to 4 days. We just reheated in the microwave. If you reheat in the oven, you may need to add a bit of broth or extra sauce so that it doesn’t dry out.
