Super simple and fast, these Grilled Pork Chops with Cilantro Lime Sauce are packed with flavor and done in about half an hour.

I love a good marinated piece of meat, but there is also something really rewarding about a simple pork chop that has been perfectly grilled.
And it doesn’t hurt that these Grilled Pork Chops with Cilantro Lime Sauce are so easy and fast that they can be thrown together as a quick last minute 30 minute dinner.
Flavor and fast – the perfect combination!

Ingredients
- Olive Oil: You want to use a good extra virgin olive oil. The flavor will come through for this sauce.
- Lime Juice: You want fresh lime juice. You’ll mist likely need around 4 limes, depending on how ripe they are and how much juice you can get from them.
- Cilantro: You don’t need a lot of cilantro, but it adds great flavor.
- Garlic: If you don’t like raw garlic, you can sub in some garlic powder instead of fresh garlic. I just like to make sure it is finely minced or grated so you don’t get big chunks of garlic.
- Salt: Use kosher salt or sea salt for the best results.
- Red Pepper Flakes:This gives the sauce a little bit of heat. Feel free to adjust the amount of red pepper flakes you add, according to your preference.
- Pork Chops: I have made this with bone in as well as boneless pork chops. I’ve also use thinner pork chops, and thicker pork chops. My favorite is bone in pork chops that are about 1 inch thick.

How to Make Grilled Pork Chops with Cilantro Lime Sauce
STEP 1: Preheat your grill. While it’s heating up, make the cilantro lime sauce by mixing together the olive oil, lime juice, cilantro, garlic, salt, and red pepper flakes.
STEP 2: Take your pork chops and dry them with paper towels, if needed. Season both sides of the pork chops with salt and pepper.

STEP 3: Once the grill is hot, add the pork chops. You want to cook them on medium-high, then flip the pork, reduce the heat to medium, and cook until they reach 140ºF, about another 4-7 minutes.
STEP 4: Remove the pork from the grill, and top each of the pork chops with a spoonful of the cilantro lime sauce. Let the chops sit for 10 minutes, then serve with more of the sauce.

Tips and Tricks
Every grill cooks differently. You may need more or less time, depending on your grill.
The thickness of pork chops will also determine how long they will cook. An instant read thermometer will be your best friend to determine when they are done.
If you are using boneless pork chops, you will want to cut a minute or two off of the cook time.
You can add all of the sauce to the chops before serving, or we like to spoon about half over the top, and then serve the rest at the table.

Grilled Pork Chops with Cilantro Lime Sauce
Ingredients
- 1/3 cup extra virgin olive oil
- 1/4 cup fresh lime juice
- 2 tablespoons minced fresh cilantro
- 1 clove garlic finely minced or grated
- 1/2 teaspoon salt
- 1/4 teaspoon red pepper flakes
- 4 (1-inch) bone in pork chops (about 2.5 lbs)
- salt and pepper to taste
Instructions
- Preheat a grill to medium-high heat.
- In a small bowl, combine the olive oil, lime juice, cilantro, garlic, salt, and red pepper flakes. Whisk to combine. Set aside.1/3 cup extra virgin olive oil, 1/4 cup fresh lime juice, 2 tablespoons minced fresh cilantro, 1 clove garlic, 1/2 teaspoon salt, 1/4 teaspoon red pepper flakes
- Pat the pork chops dry, then season to taste with salt and pepper.4 (1-inch) bone in pork chops, salt and pepper
- Place the pork chops on the grill and cook for about 4 minutes with the grill closed. Flip the chops, and turn the heat down to medium. Cook an additional 4-7 minutes, or until the pork reaches 140ºF with an instant read thermometer. (The pork will get up to the full temp of 145ºF while it is resting.)
- Transfer the pork to a serving tray or baking pan. Add a spoonful of the cilantro lime sauce to the top of each pork chop. Let them rest for 10 minutes.
- Drizzle more of the cilantro lime sauce over the tops of the pork chops before serving, and pass any additional sauce at the table.
