These Double Chocolate Oatmeal Cookies are for the chocolate lovers! Filled with mini chocolate chips and cocoa powder, these hearty cookies are soft yet chewy. They just may be the perfect chocolate cookie!
We love a good oatmeal cookie in any form! For other favorite oatmeal favorites, try these Oatmeal Scotchies or Banana Oatmeal Cookies.

If I was a person who always had a batch of homemade cookies in the cookie jar, these Double Chocolate Oatmeal Cookies would for sure be a cookie that would show up often. Lots of chocolate flavor, and still soft and delicious.
It always seems like whenever chocolate and oatmeal are combined, people think of No Bake Cookies. And while I do love those cookies, this baked (non peanut butter) version is the first one that comes to my mind.
If you are an oatmeal fan, and a chocolate fan, these cookies are for you!

Ingredients
- Flour: You just need all-purpose flour for these cookies.
- Cocoa Powder: You will need regular, unsweetened cocoa powder. I usually just use whatever my grocery store carries, which is usually Hershey’s or Nestle.
- Baking Soda & Baking Powder: I tested this recipe using just baking powder, but we all agreed that the cookies are better when you use a combo of both baking soda and baking powder.
- Salt: This is to help balance flavors.
- Butter: I usually use unsalted butter because that is what I keep on hand. If you are using salted butter, just cut back on the amount of salt a little bit.
- Sugar: You need both brown sugar and white sugar.
- Eggs: Room temperature eggs are best, so set them out a little bit before you start your cookies.
- Vanilla: The recipe calls for 1 teaspoon, but I will often bump this up to 2 because I love the flavor it adds!
- Oats: Unlike my traditional oatmeal cookies, these cookies use quick oats. They don’t have as much of an “oat” feeling to them, but they still have the chew and the texture of an oatmeal cookie. If you choose to use regular oats instead of the quick oats, they should still work but the final cookies my be a little different in texture and spread.
- Chocolate Chips: I like to use mini chocolate chips. They evenly disperse through the cookies, leaving little pockets of chocolate. They aren’t as overwhelming as regular chocolate chips, and I think they add a more even chocolate flavor.
- Flaked Sea Salt: I know this sounds like a bougie addition, but I love the contrast of the sweet and salty. And if you are someone who doesn’t like overly sweet desserts, the salt helps to counteract that sweetness. I have a box of Maldon Sea Salt Flakes, and it will last forever.

How to Make Double Chocolate Oatmeal Cookies
STEP 1: Mix together the flour, cocoa powder, baking soda, baking powder, and salt. Set this mixture aside.
STEP 2: In a large bowl, or in the bowl of a stand mixer, beat the butter and both sugars together until it is light and fluffy. Scrape down the bowl, as needed.

STEP 3: Add in the eggs, one at a time, scraping down the bowl between additions. Then mix in the vanilla.
STEP 4: Add the dry ingredients that you mixed together earlier. Beat this all together until combined.

STEP 5: Last, addd in the oats and the chocolate chips. Mix this just until combined. I like to mix it by hand at the end, just to make sure everything from the bottom is mixed in.
STEP 6: Scoop the dough onto a baking sheet. I make these cookies a bit larger, using a 2 1/2 tablespoon scoop. Bake the cookies just until they are set around the edges, but still soft in the middle. Sprinkle with the flaked sea salt right when they come out of the oven.

Tips and Tricks
You don’t want to overbake these cookies. They will go from chewy and soft to dry. If anything, I like to underbake them slightly.
Store the cookies at room temperature in a covered container. They will last a few days, but are best on the first and second day.
You can make these smaller, but the bake time will need to be decreased. Or make giant cookies, but increase the bake time!

Double Chocolate Oatmeal Cookies
Ingredients
- 1 1/2 cups all-purpose flour
- 1/2 cup cocoa powder
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup butter softened
- 1 cup light brown sugar
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 1/4 cups quick oats
- 1 1/2 cups mini chocolate chips
- Flaked sea salt optional
Instructions
- Preheat the oven to 350ºF.
- In a bowl, combine the flour, cocoa powder, baking soda, baking powder, and salt.1 1/2 cups all-purpose flour, 1/2 cup cocoa powder, 1 teaspoon baking soda, 1 teaspoon baking powder, 1/2 teaspoon salt
- In the bowl of a stand mixer, or in a large bowl with a hand mixer, beat the butter, brown sugar, and granulated sugar together until light and fluffy.1 cup butter, 1 cup light brown sugar, 1/2 cup granulated sugar
- Add in the eggs, one at a time, beating after each addition. Beat in the vanilla.2 large eggs, 1 teaspoon vanilla extract
- Add the flour mixture to the bowl and mix just until combined. Add the oats and chocolate chips, and stir until mixed.2 1/4 cups quick oats, 1 1/2 cups mini chocolate chips
- Use a 2 1/2 tablespoon scoop to scoop the dough onto baking sheets, making sure to keep the cookies at least 4 inches apart. Bake until just set on the edges, about 10-12 minutes. Do not overbake.
- Once the cookies come out of the oven, sprinkle with flaked sea salt, if desired. Cool on the baking sheets for a couple minutes, then remove to a cooling rack to cool completely.Flaked sea salt
