  • Mexican Pork Roast Tacos

    It was Saturday afternoon about a month ago. I hadn’t made it to the grocery store yet, but I was exhausted. I knew I needed to go so that I could make dinner on Sunday night. But I just didn’t think I had it in me to fight the Saturday crowds.

    So what did I do? I pulled out one of my cookbooks that I haven’t blogged from, and searched for a recipe where I had all of the ingredients on hand. It was a bit difficult, because my pantry has been quite bare these days. But I did have a pork tenderloin in the freezer and a few veggies in the fridge, so I was happy when I was able to come up with a meal plan that didn’t require any grocery shopping!

    Bonus for me that this was also a Crock-Pot recipe. I know a lot of people see their Crock-Pots as something to get out during the winter, but I love to use mine during the summer. It doesn’t heat up the house like using the oven or stove top does, so I actually like mine better in the summer than in the winter!

    The pork was put into the Crock-Pot with the required ingredients, and that night we had a hot dinner with very little effort. I had to improvise a bit to turn these into tacos, but it all worked out. I didn’t have any lettuce, so we used cabbage, which I actually really liked because of the great crunch. The tomatoes came from the garden, and I had to cut up some cheese sticks for the cheese. Both my husband and I were surprised how much we actually enjoyed this meal!

    The only change I would make on this recipe is to leave out the carrots on the pork if you plan on making them into tacos. The carrots just seemed out of place to me. But besides that, I think I found a great go-to recipe!

    Mexican Pork Roast
    adapted from Rival Crock-Pot Cooking

    2 medium onions, sliced
    3 carrots, peeled and sliced
    2 lb pork loin roast
    1 teaspoon salt
    1/2 teaspoon oregano
    1/2 teaspoon cumin
    1/2 teaspoon coriander
    1 cup water

    Place onions and carrots in Crock-Pot. Rub pork with seasonings and place on top of vegetables. Add water. Cover and cook on low for 8-10 hours.

    If making tacos, shred pork meat and serve on tortillas with toppings of choice.

  3. I have been meaning to make a pork roast for tacos in the slow cooker, yum!

    I swear the worst thing about cooking is the darn grocery shopping.

    And yes you should have mussels, but if you are pregnant.. you may want to wait just in case they turn your stomach or something.

  7. Great idea to do pork in the crockpot! I will have to try these on a weeknight. Sometimes I don’t feel like cooking after work, these would be easy to throw together if the meat was done!!

  13. Crockpots are fantastic for this kind of quick meal. I use mine a lot. Your tacos look so scrummy. I often grate carrot to add a vegie to a dish, so I didn’t think carrot was too strange.

    The cupcakes look good also.

    I hear you on Wal Mart. I hate going there! I have to go there to buy ice cream, though. It’s a lot cheaper than anywhere else.
    Last week I bought hair gel and cereal, and I left it there when I checked out. SO, I had to drive all the way back. Ugh.

  16. A great way to cook pork and I bet it was so tender! It’s amazing what can be rustled up when needs be and I have to say those Tacos look perfect!!

  18. I always think it’s amazing when a good meal can be pulled off without going to the store — especially when you are tired. This looks really good. And you’re so right about the crock-pot not heating everything up. Not having to defrost anything is what I like. The cabbage is perfect for this!

  22. Oh, great … now I’m starving for pork roast tacos! I seriously could put a huge dent in the world’s taco supply with this recipe. Now that my kids have started soccer again, I need to be using the ol’ crock pot more. This is a great recipe for me to start with. YUM!
