I absolutely love giving gifts. But to be totally honest – I’m kind of no good at it. Meaning, I have no idea what to give people. I want something meaningful and useful, but I always have a hard time figuring out exactly what that is.

While I was smitten with all three boxes, you all probably know that I was most inspired by the pie kit.  This is the year of pie, after all!  😉  So I decided to get in there and make a pie, inspired by my new beautiful Thoughfully gift box.  I originally was going to make the pie in that beautiful ceramic pie dish, but then I decided to make a standard sized pie so that I could share the recipe with all of you. And this White Chocolate Caramel No Bake Pumpkin Pie is totally worthy of one of those recipe cards!!
First of all, I know that I called this pie no bake and, well, you do have to bake the crust. But don’t hate on me. The filling is totally no bake, and if you really wanted to go 100% no bake, this would actually be really good in a graham cracker crust. But you guys, this pie is so simple, and it is so good. None of the flavors totally overwhelm each other, but they come together perfectly to make this super easy pie. And if you want to make this pie for the holidays, it’s perfect since you can make it the night before!

White Chocolate Caramel No Bake Pumpkin Pie

Description
So easy, this White Chocolate Caramel No Bake Pumpkin Pie is ultra creamy with the perfect amount of pumpkin flavor. This is a great way to change up your pumpkin pie!
Ingredients
- 2 (3.4 oz) packages Instant White Chocolate Pudding
- 1 cup cold milk
- 1 cup pumpkin puree ((not pumpkin pie mix))
- 1 1/2 teaspoons pumpkin pie spice
- 1 (8 oz) container frozen whipped topping (Cool Whip) (thawed)
- 1 9-inch pie crust, baked
- caramel ice cream topping
Instructions
- In a large bowl, combine the pudding mixes, milk, pumpkin puree and pumpkin pie spice. Beat until completely combined and smooth. Fold in half of the whipped topping. Spread the mixture into the baked pie crust. Spread the remaining whipped topping over the top of the pie.
- Cover the pie loosely with plastic wrap and refrigerate for at least an hour.
- Before serving, drizzle caramel topping over the top of the pie.

White chocolate, caramel, and pumpkin pie..I think that I may be in love with a pie! What an amazing combination! The recipe seems straightforward enough, I think that I may try to make this for the dessert that I bring to Thanksgiving dinner.
