We have made it to Day #3 of Smoothie Week – celebrating the release of my cookbook, Best 100 Smoothies for Kids.
I’m so excited that this book has finally made it to store shelves. My kids and I had so much fun testing and making the smoothies. And luckily, my kids still get excited about drinking a smoothie!!
When you are trying to come up with 100 ideas for smoothies, you start trying anything and everything. Some don’t work and are epic failures. But sometimes, you find a new favorite smoothie ingredient.
I’m looking at you – carrot juice. 🙂
Up until the book, I had never tried carrot juice in a smoothie. I know that some people will blend whole carrots, but I found that the whole carrots gave it thicker texture with never really smooths out no matter how much you blend it. So I take the easy route and use store-bought carrot juice. What can I say – I like to keep things simple!
This smoothie has a great punch of tropical flavors, and makes a great breakfast smoothie, or a great afternoon snack. And I love that I’m getting some veggies in without even really noticing it!
- 2¼ cups carrot juice
- 1½ cups frozen pineapple
- 1½ cups frozen mango
- 1-2 kiwi fruits, peeled and sliced
- Pour the carrot juice into a blender. Add the pineapple, mango and kiwi and process until smooth.
- Serve immediately.
