It’s better with bacon – especially when it’s taco night! These Chicken Bacon Avocado Tacos are perfect for Taco Tuesday!
If you know me, you know I’m taco obsessed. They are a staple on the menu around here. Of course, I add them because I love them (and I’m the one making the menu!), but they are one of the few things that all of my kids love, too. In fact, my daughter asks just about every Tuesday morning if it’s going to be a Taco Tuesday!!
I love the typical ground beef tacos, but I love to switch things up a bit, as well. Sometimes, I take it way out there, like with Greek Tacos or Buffalo Beef Tacos, but sometimes I want something that is a little bit more familiar, but still different.
Enter these Chicken Bacon Avocado Tacos. You really can’t go wrong when you add bacon to anything, and tacos are no exception. And I’m going to be as bold as to say that you can’t go wrong when you add avocado to anything, too. So of course, when you combine bacon and avocados with some chicken, you get 2 thumbs up.
One of the most important parts to these tacos is the Chicken Taco Seasoning Mix from Old El Paso. It’s no secret that I’m an Old El Paso fan, and this Chicken Taco Seasoning Mix is one of my current favorite products. I used it in some Grilled Chicken Nachos a little while back, and was immediately hooked. If you haven’t tried it, you definitely need to change that. 😉

Chicken Bacon Avocado Tacos

Description
It’s better with bacon – especially when it’s taco night! These Chicken Bacon Avocado Tacos are perfect for Taco Tuesday!
Ingredients
- 8 oz bacon, chopped
- 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 package Old El Paso Chicken Taco Seasoning Mix
- 1/4 cup water
- 1 4.6 oz package Old El Paso Crunchy White Corn taco shells
- 1 avocado, thinly sliced
- shredded cheddar cheese
- cilantro
Instructions
Cook the bacon in a large skillet over medium-high heat until crispy, about 6 minutes. Using a slotted spoon, transfer the bacon to a paper towel lined plate, leaving the bacon grease in the skillet. Drain all but 1 tablespoon of the bacon grease.
Add the chicken to the skillet and cook until chicken is browned and cooked through. Add the taco seasoning and the water. Heat to boiling. Reduce the heat and simmer uncovered for 3 to 4 minutes, stirring until thickened. Stir the reserved bacon into the chicken.
Heat the shells as directed on the package.
To assemble the tacos, add some of the chicken and bacon to each taco shell, as well as 1-2 avocado slices. Sprinkle with cheese and cilantro and serve.
