Artichoke Pasta Salad

You guys – I have been side dish salad obsessed lately. We had a family dinner/party to celebrate my niece who graduated from high school, and for the menu, we each brought a salad. So the dinner was made up of all side dish salads, and it was so good that I’m still thinking about it a month later. I am completely happy making a meal of salads, so this was a little bit of heaven!

MY LATEST RECIPES

For the dinner, I made — you guessed it — this Artichoke Pasta Salad. I actually made this pasta salad for Easter at my in-laws several months ago. But when my sister said we were all doing salads, I knew I needed this salad again. My husband, who is not even a big pasta salad guy, absolutely loves this salad and enjoyed every last bit of the leftovers.

Not only is this Artichoke Pasta Salad super tasty, but it’s so easy to make as well.

Easy Vinaigrette

You start by making the easy vinaigrette that will go on this salad. You only need a few ingredients:

  • white wine vinegar
  • fresh lemon juice
  • Dijon mustard
  • Extra Virgin Olive Oil
  • salt and pepper

These are all pantry staples for me, so this is super easy for me to throw together.

To make the vinaigrette, I used the twister jar on my Blendtec. This made it easy to emulsify the dressing. If you don’t have a blender or mini food processor that you want to use, you can put all of the ingredients in a jar with a tight fitting lid and shake it vigoursly until the dressing is completely combined.

When to serve this Artichoke Pasta Salad

Like I mentioned above, I first made this for Easter, the for a family dinner. I then made it again just at home for my family to serve alongside some ribs that we smoked. It really is a great pasta salad recipe to serve no matter the occasion!

Delicious and super easy to make, this Artichoke Pasta Salad is filled with pasta, artichoke hearts, prosciutto and an easy vinaigrette. This salad is perfect for summer potlucks or family dinners.


Ingredients

Vinaigrette:

  • 2 tablespoons white wine vinegar
  • 2 tablespoons lemon juice
  • 1 teaspoon Dijon mustard
  • 1/3 cup extra virgin olive oil
  • Salt and pepper, to taste

Salad:

  • 12 ounces dry bowtie pasta
  • 1 (13.75 oz) can artichoke hearts, drained and roughly chopped
  • 4 oz prosciutto, chopped
  • 4 green onions, sliced
  • 1/3 cup chopped fresh parsley
  • 3 tablespoons chopped fresh basil
  • 1 cup freshly grated Parmesan cheese

Instructions

Make the vinaigrette: combine the vinegar, lemon juice, and mustard in a food processor or blender. (I use the twister jar on my Blendtec.) Stream in the olive oil until it is smooth and combined. Season to taste with salt and pepper.

Make the salad: Cook the pasta according to the package directions; drain and rinse.  In a large bowl, combine the pasta, artichokes, prosciutto, green onions, parsley, basil and cheese. Mix well. Pour the dressing over the salad and toss gently. Cover and chill in the refrigerator for 4 to 6 hours before serving.
