Cookies and Cream Cupcakes
Filed under dessert - cakes/cupcakesMay 19I’ve mentioned before that my husband is an Oreo lover. He will seriously eat them every day if we have them at home. Me – I like them ok, but I prefer a home baked goodie any day over a store bought cookie. So when I saw these cupcakes on Confessions of a Cookbook Queen – I knew it would be a great way to make both of us happy!!
These cupcakes are a true treat. You start with an Oreo on the bottom, followed by a white cupcake filled with a marshmallow filling. Let me tell you – that marshmallow filling alone is reason enough to make these. I just wanted to eat it with a spoon (and did!). Then, as if they couldn’t get any better – you top that off with Oreo infused buttercream.
Now, I’d take one of these over a plain, store-bought cookie any day!!
Cookies and Cream Cupcakes
from Confessions of a Cookbook Queenmakes about 24-30 cupcakes
Cupcakes
1 box white cake mix
1 stick of butter, melted
1 cup water
3 eggs
24-30 OreosFilling
13 oz jar Marshmallow Creme
1 stick of salted butter, softened
1/4 teaspoon vanilla
4 tablespoons heavy cream
1 1/2 cups powdered sugarFrosting
4 sticks salted butter
1/4 cup heavy cream
2 teaspoons vanilla
8 cups powdered sugar
15 Oreos, crushedTo make the cupcakes: Preheat the oven to 350F. Line muffin tins with liners. Place an Oreo in the bottom of each liner.
Combine the cake mix, butter, water and eggs in the bowl of a stand mixer. Mix on low speed for one minute. Increase the speed to high and beat for one minute. Fill the liners 2/3 full. Bake in the preheated oven for 20 minutes or until the tops spring back when lightly touched.
To make the filling: Beat the Marshmallow Creme, butter, vanilla and heavy cream on medium until it is smooth. Add the powdered sugar slowly, then increase the speed and beat for a minute. Refrigerate the filling until ready to use.
To make the frosting: Beat the butter, cream and vanilla in the bowl of a mixer until smooth. Slowly add the powdered sugar. Once the powdered sugar is mixed in, beat for 2 minutes on medium-high. Fold in the crushed Oreos.
To assemble: Once the cupcakes are cool, cut a small hole in the center of the cupcake. (For a tutorial on how to fill a cupcake, click here.) Fill the centers with the marshmallow filling. (You can do this by spooning it in or by using a pastry bag and piping it in.)
Generously frost or pipe the frosting on the cupcakes. Top with a mini Oreo, if desired.

Today is the day of the Oreo! I have seen 4 blogs post recipes using them! LOL! I love Oreos and love all the Oreo inspired and infused treats. I have made an Oreo frosting before and LOVED IT!!!! I served mine on chocolate cupcakes however and was in pure heaven.

I saw these and also totally fell head-over-heels for them. Oreos are a weakness of mine and I haven’t had one in…four years. Because, well, I can’t be trusted around them. But for these cupcakes…I think I need to take a hiatus from my hiatus. Amazing!

These cupcakes are such a work of art. From the outside they look like normal cupcakes. It is not until you cut them in half that I saw their true beauty. Yummy.

They were wonderful! The yellow cake mix worked out great. I would recommend that you split the filling recipe in half (use a 7 oz jar of marshmallow creme)–I ended up with WAY TOO MUCH filling, even with 31 cupcakes. I also halved the frosting recipe, but I didn’t pipe my frosting, I just spread it on with a knife. So if you pipe, make the whole recipe.
Rich and decadent–I definitely could only handle one of these, but they were amazing!

Kate – I’m so glad you liked them! I agree – there was a lot of the marshmallow filling – I should have mentioned that. I guess I didn’t mind because I ended up just eating the filling – one spoonful at a time!!

Thank you so much I love this recipe. I changed it up a little — Instead of an Oreo at the bottom I made an Oreo crust, and then used flour frosting with crushed Oreos for the top. I agree WAY to much filling. I’m going to used the leftover on a Devil’s Food cake

That frosting is so pretty! I love the look of cookies & cream.I made some cookies & cream cupcakes, only they were MINI, and CHEESECAKE! Can’t go wrong there, lol.

@bree bree, you’re container will probably say heavy whipping cream or heavy cream – either should work.
