Garlicky Baked Shrimp

I have sung the praises of Real Simple magazine before. And I’m going to again! One feature that I love in this magazine is the “Quick Takes” section. Here, they will take one ingredient and show 10 different, simple recipes with that ingredient. I always love it because not only do all of the recipes look good, but they are all extremely simple. Few ingredients and few instructions. Most of the recipes I make from this magazine come from this section.In the April issue, shrimp was the ingredient. I had some shrimp in the freezer, but the hard part was deciding which recipe I wanted to use. I went with this shrimp. SO easy. I spent maybe 5 minutes throwing it together, then into the oven it went. And if you like shrimp and garlic, this is super tasty as well. The only complaint I would give this is that it’s not a very substantial meal if you are serving it as a main dish. Both my husband and I agreed that this would make a great (and easy) appetizer, but I was glad I made the full recipe for the 2 of us. Or maybe we just needed some really filling side dishes to go along with it! But that really is the only thing I have to complain about, so that’s a great sign!
Garlicky Baked Shrimp
adapted from Real Simple April 2010
serves 4total time: 25 minutes
1 pound raw, peeled and deveined medium to large shrimp
4 cloves sliced garlic
2 tablespoons chicken, seafood or vegetable broth
salt and pepper
1/4 cup softened butter
1/4 cup panko bread crumbs
2 tablespoons chopped parsleyPreheat oven to 425F.
In a baking dish, combine the shrimp, garlic and broth. Season with salt and pepper. Combine the butter, bread crumbs and parsley and sprinkle over shrimp.
Bake in the preheated oven until the shrimp are opaque, 15 to 18 minutes.

It sounds good, perhaps it needs to be served over some rice of crispy french bread to make it more filling

oh mama! I can easily see this on top of pasta, possibly with some diced tomatoes thrown on for good measure. I can see this as a salad topping too, maybe a caesar style. oh yeah: as a sandwich filling on crusty baguette or ciabatta. OR! ha! as a topping for a baked potato.

That section of the magazine sounds awesome, especially for when something is on sale at the supermarket and you end up with five pounds of it. And don't want to eat the same thing for five weeks. Anyway…. I love the looks of this baked shrimp. So easy and delicious.

Looks and sounds terrific! Except for my daughter we LOVE shrimp. Your recipe is like an easier version of Ina's. Perfect for game nights when we don't get in until almost 8 and the boys still want a home cooked meal. Thanks for sharing.
Btw, I bet some orzo would be super yummy with this and add some oomph to the meal.

Looks delicious, like a no-fuss shrimp scampi. I bet adding some crusty french bread and some fresh cut fruit would make this a wonderful light summer meal!

We love shrimp! Hubby went fishing in Alaska last fall and brought home the best shrimp! I used the last of it making Shrimp quesadillas–a new favorite. I will have to try this baked shrimp. I'm always open to a new recipe.

Yum! There is a shrimp appetizer like this at Carraba's that is one of my favorites. It is served with crispy, buttery pieces of garlic bread which you can use to get every last bit of that delicious sauce. Bookmarking this one to try soon!

Yum. I can see a side of nice crusty french bread to sop up all the sauce! I like the idea above of serving over pasta or rice too.
