An easy homemade teriyaki sauce recipe made from pantry staples. This sauce is bold and thick and is great as a marinade or as a sauce served with your favorite meats or vegetables.

Homemade Teriyaki Sauce Recipe
There are lots of things I used to never considered making before, turning instead to the conveniently bottled versions. Salad dressings, mayonnaise, etc. Some of them I still buy bottled – mayonnaise – and some I make from scratch at home – salad dressings. One of these condiments that I love to make from scratch is homemade Teriyaki sauce. It is so super easy and good, it made me wonder why I ever bought the store bought kind!
This homemade teriyaki sauce recipe only takes minutes to make, and tastes a lot better than the jarred sauce. This sauce is great just served as a sauce alongside your favorite meats as well as a marinade. I love that it is so versatile!
Ingredients
- Brown Sugar: I use light brown sugar. You could also up the amount of honey, but I think they both bring in different flavors, so I like to use both.
- Soy Sauce: I always use low sodium soy sauce. You could also use tamari.
- Honey: If you like the sauce sweeter, use 2 tablespoons, otherwise just use one.
- Garlic: I always have fresh garlic on hand, so I like to use fresh. You could sub in garlic powder. If you do, you’ll need about 1/4 teaspoon.
- Ginger: I don’t always have fresh ginger on hand, so that is why I use ground ginger. Feel free to use fresh if you do have it, though. You’ll need 1-2 tablespoons of fresh ginger if you do sub.
- Cornstarch: This is what will thicken up your sauce. The sauce will get decently thick, so if you prefer a thinner sauce, feel free to cut this amount in half.
How to Make Homemade Teriyaki Sauce
It really doesn’t get much easier than this recipe!
1: Start by combining all of your ingredients except the cornstarch and 1/4 cup of water. Whisk to combine, and set over medium heat.
2: In a small bowl, whisk together the cornstarch and the 1/4 cup water.
3: Pour the cornstarch mixture into the saucepan.
4: Cook, whisking, until the sauce thickens.
How to Use This Homemade Teriyaki Sauce
This homemade teriyaki sauce makes a thicker sauce that the bottled sauce, so it would be good served on top of something, but I have also used it as a marinade. If you don’t want it thick as a marinade you can skip adding the cornstarch and extra water.
Here are some of my favorite ways to use this sauce:
- As sauce with grilled chicken
- Add it to chicken pieces and broccoli and serve over rice
- As a glaze for salmon
- Mixed into noodles
- In any stir fry

Storage
I usually make this teriyaki sauce when I need it, but it’s also great to just have on hand for an easy dinner.
I store it in a mason jar in the refrigerator. I will usually try to go through it in a week or less, but really, it should be good for 2-3 weeks if stored properly.
I have not tried to freeze this, although I’m assuming it would freeze well.

Homemade Teriyaki Sauce Recipe
Ingredients
- 1 cup (8 oz) water
- 5 tablespoons (67 g) packed light brown sugar
- 1/4 cup (2 oz) low sodium soy sauce
- 1-2 tablespoons honey
- 1 large clove garlic ,minced
- 1/2 teaspoon ground ginger
- 2 tablespoons cornstarch
- 1/4 cup (2 oz) cold water
Instructions
- Combine the 1 cup water, brown sugar, soy sauce, honey, garlic, and ginger in a medium saucepan and set over medium heat.
- In a small bowl, combine the cornstarch with the 1/4 cup water and whisk until dissolved. Add the cornstarch mixture to the saucepan.
- Heat the sauce until it thickens to your desired thickness. If the sauce becomes too thick, add more water to thin it out.

So I made this twice. once following the exact recipe and once with a few two weeks. The initial recipe is good but like others said just a tad too sweet. So I knocked back on the brown sugar and used dark brown sugar to give it a more deep molasses flavor. I also added in an extra tablespoon of soy sauce, a teaspoon of mirin and instead of just regular honey I used chili infused honey.

This is an amazing recipe! Just one question, I made a lot of the sauce and stored it in my fridge. This morning I looked at it and it was like jelly. Somewhat like cranberry sauce in a can. Once heated its fine but what’s going on here? What did I do??

It will thicken up once it is in the refrigerator, so that is normal. If you want it to stay looser when it is cold, just use less cornstarch next time. I’m so glad you loved it!

This is a great foundation for a pinapple teriakyi sauce. Just like Deborah stated, if you don’t want it as sweet, just reduce the honey and/or brown sugar. I added a few dashes of sesame oil and some seseame seeds. Because I wanted to make a pinapple version, I used 1/2 cup water with 3/4 cup pinapple juice. I took one pinapple ring and diced it up, and stirred it into the sauce, after all ingredients were in. I followed all the directions on how to cook it everything. I like her suggesstions on how you can just thin out the sauce, if it’s too thick. You can also use this on top of salmon. Thanks so much!

I made this recipe as written and really liked it. Then I realized that some similar recipes used 5 teaspoons of brown sugar rather than 5 Tablespoons. I made another batch with less sugar, but ended up combining them. Still tasted great! I also added less cornstarch and the combined thickness is just what I wanted.

I love this recipe. I substituted coconut sugar for the brown sugar and it came out well. I am part Hawaiian, and would like to try substituting pineapple juice for the water and honey to see how that lands. I garnish with green onion because I had it.
My recipe of choice is to serve this over grilled chicken tenderloins with a side of homemade potato salad and another side of macaroni salad and white rice. Yep, 3 starches make it a Hawaiian “plate lunch” and I call it Hawaiian soul food. Mmmmmmmmmm. We could eat this all summer.

We had to substitute flour for corn starch but other wise prepared as prescribed. Very good on steak as well as dumplings, and fried rice. Will punch it up a bit next time as I like hot spicy with the sweet.

This was okay, but not nearly as good as what I’ve had in restaurants or what my Japanese mother-in-law use to make. I used only about 3 Tbs. of brown sugar and even with that, it was still too sweet, so I would use a bit less sugar next time and a bit more ginger. Perhaps a bit more garlic as well. The consistency of the sauce was nice, though.

I have not tried freezing it, so I couldn’t say how well it would work. My guess is that it would freeze just fine, though. And it should last 2-3 weeks in the refrigerator, although we always go through it much faster than that! 😉

I made it today and used it to season wok stir-fried noodles. So good!
It took 5-6 minutes of whisking the ingredients over med-high heat to douse the bubbles, deepen the sauce to a dark, rich brown, thicken it to a perfect consistency, and meld all the flavors after adding the water-cornstarch mixture.
I cut the packed brown sugar to 4T, used 1.5T honey and it was plenty sweet for me.
I like knowing making it from scratch means one less store-bought glass bottle to buy and recycle..

JUST finished making this for our family dinner tonight. My kids are excited to try this! Only thing I didnt have was rice vinegar…I had several other types but was out of this. I have used this recipe, with my tweeks for taste, many times, both in the Crockpot (slow cooker) & in the oven, & on b/s chicken thighs & breasts & on bone-in/skin- on thighs. I also add a bit of sesame oil, but very little, maybe a 1/4 teaspoon, because it will overpower other flavors. I also add a teaspoon, or more to taste, of seasoned rice wine vinegar. I always taste & tweek, as some like a sweeter sauce & some like it more savory with additional soy, garlic & ginger. This is an excellent base from which to start!

Hopefully it thickened up for you. It should thicken up pretty quickly with the cornstarch, so you might want to do a quick double check to make sure the quantities you added were correct. Hopefully it all worked out!

This recipe was great for my late night need for teriyaki sauce. I had made some chicken kebabs and only after they were made did I realize that there wasn’t any teriyaki sauce in my pantry. Fortunately, I had everything to make this, I just needed to combine them and let it thicken. It was so quick and easy to make AND it tastes absolutely delicious. I didn’t have a clove of garlic so I ended up putting in garlic powder, and I used dark brown sugar as well as a reduced sodium soy sauce. To me this teriyaki sauce is perfect. I don’t think I’ll ever want to go buy teriyaki sauce from shelves anymore.

Thank you for this great recipe! Absolutely fabulous! If someone has a problem with the high sodium content in soy sauce, try BRAGG LIQUID AMINOS. It is an all purpose seasoning from Soy Protein. It is a natural soy sauce alternative with only 6% sodium, gluten-free, NON-GMO, and contains no preservatives. My sister has a problem with the high sodium content in a lot of foods so I try to use only no sodium or low sodium ingredients when I am preparing her dinners. My grocery store carries it and the manager said most grocery stores should carry it. It has the same great soy sauce taste without the sodium, gluten, GMO’s, and preservatives.
PS: I do not work for this company but wanted to share this information in case someone has a high sensitivity to the usual ingredients in store bought soy sauces. Again, thank you for this great recipe!

You can use arrowroot, potato starch, or tapioca starch. Use them the same way you would cornstarch. You can also let the sauce simmer for a really long time to reduce/thicken the sauce.

Thanks so much for this recipe! I’ve been wanting to make teriyaki tempeh ever since I went to a restaurant and had a teriyaki tempeh sandwich. It was delicious! So this past weekend I bought the tempeh, but forgot to buy the teriyaki sauce. Today, I decided it was time to make the tempeh so I jumped online and found your teriyaki recipe. It was sooooo easy, but good! I put just a drop of sesame oil in a little bit of it just to see what it would taste like. It was good, too! My husband prefers liquid aminos over soy sauce so when I send him to the store, that’s what he comes back with, so I sub’d the soy sauce with liquid aminos. It was a little salty, but so good! I actually told a friend about it today when he said he was making teriyaki chicken. I told him he had to try this recipe! Will definitely be making this again! Thanks!

This is delicious. I had a small 6 oz can of pineapple juice that I added 2 oz water to it, to have the 8 oz liquid. I only used 2 tbsp honey since I had the sweetness of pineapple. Added some red pepper flakes to spice it up some and had a wonderful steak strips with onion, broccoli & thin carrots served over rice.

I have just made your recipe for teriyaki sauce to use as a sauce over shredded pork to be served over rice. I have about 5 pounds of pork and I made 3 times the sauce recipe or 4 1/2 cups. I found this recipe on food.com ( as you noted) – I follow it which just has powdered garlic vs fresh, and it is delicious !! I’ve been making my own for about a year, this is a serious keeper recipe and an awesome staple to have on hand to use in a quick stir fry ( whatever veg you happen to have on hand) stir fried with rice, add chicken or steak …I’ve used up left over BBQ steak, finely sliced it the next day, did a quick pan fry with this teriyaki, added some chopped mushrooms, over rice, or broccoli…I also really love doing a quick stir fry of cabbage, a little broccoli , few shaved carrots, then sitfry chicken and add a ton of white mushrooms …to serve I layer it ( like the fast food places in the mall) white rice on the bottom of the bowl, topped with the cabbage mix, then the chicken mushroom mix and then top with the teriyaki…soooo good! Well. There are a few of my personal favs for using this truly awesome sauce/merinade!

I haven’t had teriyaki in a while, but was scanning the bottles in Whole Foods yesterday, looking at the combos. I’m right with you on the “make your own” and have gotten into the habit of checking out the descriptions on the labels of bottles in the store to get new ideas. Yours sounds yummy. Especially in the weather we’re having. Great for the BBQ.

My family and I love Teriyaki Chicken. Thanks for the variation. I’m sure we’ll try it out very soon.
One side dish that we typically add is
grilled jalapeno peppers. Delicious!
The kids can handle them since most of the spice is grilled out.

I suggest going with fresh ginger. It is no more difficult than chopping up garlic, and the flavor payoff is worth it.

I agree, fresh ginger makes all the difference. I also add a couple of Tbl. of apple cider vinegar for added flavor plus it tenderizes the meat.

I didn’t expect much as I’m used to store bought teriyaki sauce, but this is really tasty! I usually use just less of the honey as I find it quite sweet. 10/10

This is great. I prefer not to rely on bottled or ready made foods if I can help it. If I make it myself I know what’s in it.

I’m right there you! Wish I’d been making these “normal sauces” all along. As a Grandma, I have more time, and once I started doing so, (7 years ago) there’s no turning back. You can actually TASTE the additives and preservatives, and I can’t settle (unless I have no choice).

I love making my own sauces! No more jarred sauces for this girl!! The difference in taste makes it so worth it, so thank your for a title that made it an easy pick. I might lessen the amount of brown sugar next time, but hubby was in heaven. (He’s a big sauce guy).
