If you love that sweet-and-salty combination, you need to try these Ritz Cracker Toffee Bars. Made with just four ingredients – Ritz crackers, toffee bits, sweetened condensed milk, and chocolate – they come together quickly and make the perfect easy dessert. The buttery crackers balance the rich, chewy toffee mixture, while the layer of melted chocolate on top makes them completely irresistible.
I originally called these Skor Squares, but you don’t actually need a Skor bar to make these. (Do they even make those anymore?) Use your favorite toffee bits, and you’ll have a simple dessert that’s perfect for cookie trays, holiday baking, parties, or whenever you need something sweet without a lot of work.

Ingredients
- Ritz Crackers: I use a full 11.8 oz box of crackers. Just make sure you are using plain Ritz crackers, not flavored. And I like the original over a low salt version, as well, because the salty/sweet combo is one of my favorite things about this recipe.
- Toffee Pieces: I can usually find these in the baking aisle in the grocery store. You want the plain toffee bits, not the bits covered in chocolate. They do sell them online if you aren’t able to find them in store.
- Sweetened Condensed Milk: Make sure you are using sweetened condensed milk, not evaporated milk. This binds the ingredients together and gives the bars their chewy, rich texture.
- Chocolate Chips: I use milk chocolate, but you could definitely use semi-sweet chocolate.

How to Make Ritz Cracker Toffee Bars
STEP 1: Place all of the crackers in a food processor.
STEP 2: Process until they are fine crumbs. You want to make sure there aren’t any big chunks.

STEP 3: Combine the cracker crumbs with the sweetened condensed milk and one cup of the toffee bits. Mix this together well.
STEP 4: Press this mixture into an 8×8-inch baking dish that is sprayed with nonstick cooking spray or lined with parchment paper. Bake these for just 10 minutes.

STEP 5: Right when you take the bars out of the oven, sprinkle the chocolate chips over the top. You want to make sure they are hot! Let them sit for a couple minutes, then spread the chocolate into an even layer.
STEP 6: Sprinkle the remaining toffee bits over the top. Let the chocolate set up completely before cutting into bars to serve.

Tips and Tricks
Making these in an 8×8 inch pan gives you a decently tall bar. You could do a 9×9-inch pan and the bars just wouldn’t be as tall.
If the chocolate isn’t melting after sitting for a minute or two, you can pop the pan back in the oven for a minute or two.
I store these at room temperature in an airtight container. The toffee bits will start to soften up over time, but I actually think the flavor of the bars gets better.

Hi Terrie – I’m not sure how many cups of crumbs you’d get, but I would just weigh out 11.3 ounces of the crackers to crush.

How long does these last for In the fridge without going bad? Covered in 9×13 container??
mary says
How much are you reserving of the skor bits for the top (like your photos)? Do you put the just about the whole bag in the square mix?
Deborah says
You’ll end up using the whole 8 oz bag. 1 cup of the toffee bits go in the bars, and the remaining bits go on top.

I love this recipe so much! I know what you mean by having your hand full with 3 children. I have 2 autistic grandbabies & they are a handful sometimes, but the one thing that seems to calm them down is cooking, baking, or shopping for the ingredients used to make fantastic goodies. We’ve been trying to figure out many different recipes for this yummy edible & you have come up with the winning combination. Thank you for all of the other recipes on your blog, because now when ever my grandbabies come to Mama’s for the weekend there is always something we haven’t tried yet, but will before the weekend is out. Please keep doing what you do, so that I look like a rock star to my beautiful grandbabies.
