I have a few recipes that I fall back on when I don’t have a plan for dinner, or when I need something really easy and really fast.
This recipe for Sheet Pan Nachos is one of those recipes that I have been making for years, but am just now posting. Maybe because it’s so easy that you almost don’t need a recipe.
But regardless, this is the easiest quick dinner. And the whole family loves them! You can also serve these up for game night, because they are crowd friendly, as well!
Ingredients
- Ground Beef: I like to use a fairly lean ground beef so that I don’t have to worry about draining the grease.
- Onion & Garlic: These are both for flavor. I like to use a yellow onion, but a white onion will work, too.
- Taco Seasoning: I always keep my homemade taco seasoning on hand, and it is perfect in this recipe. You can use store bought, if desired.
- Tortilla Chips: You might notice that the recipe calls for 10-15 oz of tortilla chips. This is mostly because most bags come with somewhere between 10 to 15 ounces of chips. There is no need to use 1 1/2 bags. You can also use more chips to stretch the recipe to feed more people, or keep to the low end and have more toppings per chip.
- Beans: I like black beans, so that is what I use. My husband prefers pinto beans, though, so sometimes we’ll use those instead.
- Corn: You can use fresh or frozen corn. I’m not a huge fan of canned corn, but it will work in a pinch.
- Cheese: You just want an easy melting cheese. I used a mixture of cheddar and Monterey Jack.
- Toppings: Feel free to add or take away whatever toppings you like! We go all out with tomatoes, diced red onion, jalapeños, avocado, sour cream, and cilantro.
How to Make Sheet Pan Nachos
STEP 1: Brown your ground beef in a large skillet. When it’s almost done, add in the onion and continue to cook. In the last 45 seconds, add in the garlic.
STEP 2: Sprinkle in the taco seasoning, then stir in the water. Let this cook for a couple of minutes, just until it has thickened up a bit.
STEP 3: Now it’s time to layer! I like 2 layers to make sure every chip gets some of the toppings. Lay a layer of chips, then half the beef, half the cheese, half the beans, and half the corn. Lay another layer of chips, then the remaining beef, cheese, beans, and corn. Bake this until the cheese is nice and melty.
STEP 4: Once the nachos are done baking, add on all of your toppings. And they are ready to serve!
Tips and Tricks
Instead of adding the toppings, you can make a topping bar and let everyone add their own toppings to their portion.
We’ll usually scoop this onto plates for serving, but we have been known to all just go to town and eat off of the sheet pan!
This is definitely best eaten right away. The leftovers will get soggy.
You can do everything in one layer, but I prefer the two layers to make sure every bite has toppings and you aren’t left with a pile of bare chips on the bottom.
