I am a fan of s’mores year round, but sometimes, you just don’t have access to a fire. So that’s when s’mores inspired treats come in handy!
These Indoor S’mores kind of remind me of a rice krispie treat, but s’mores inspired. Filled with graham cracker cereal, mini marshmallows, and a dreamy, chocolate coating – these disappear just about as fast as you can make them!
Ingredients:
- Miniature Marshmallows: You’ll want to use the miniature marshmallows because you use most of them to make the sticky coating, but you will also add in some at the end so that you have bits of marshmallows throughout the bars.
- Milk Chocolate Chips: You could probably use semi-sweet chocolate chips if you want or if that is what you have.
- Light Corn Syrup: Not only does the corn syrup add to the sweetness, but it also helps to give the coating an amazing, chewy texture.
- Butter: I usually use unsalted butter, but salted butter will work just fine in this recipe.
- Vanilla: I like to use real vanilla extract.
- Cereal: To get that graham cracker flavor, you want a cereal like Golden Grahams.

Description
Don’t have a campfire? These easy Indoor S’mores cereal bars have all of your favorite s’mores flavors in an easy dessert bar.
Ingredients
- 6 cups miniature marshmallows, divided
- 1 1/2 cups milk chocolate chips
- 1/4 cup light corn syrup
- 5 tablespoons butter
- 1 teaspoon vanilla
- 8 cups Golden Grahams cereal
Instructions
Butter a 9×13-inch baking dish and set aside.
In a large bowl, combine 5 cups of the marshmallows, the chocolate chips, corn syrup, butter and vanilla. Microwave* on high for 2-3 minutes, stirring every 30-40 seconds, until melted an smooth. Add in the cereal and stir to coat. Stir in the remaining 1 cup of marshmallows.
Press the mixture evenly into the prepared pan. Let it stand at least 1 hour before cutting into bars.

Okay I really have to make these! They look so delicious! Good idea with cutting them into small pieces and then putting them in the cupboard. And it’s a great idea to still eat the unhealthy things you love, but in smaller quantities. That’s what I try and do too. 🙂 Way better than giving everything up!
