Originally posted April 12, 2011 – I feel like I just posted this summer salad for the first time yesterday – I couldn’t believe it when I went to make this again and realized that it was 4 years ago when I first posted it!! I had just moved from Blogger to WordPress, and it was a very exciting time here at Taste and Tell. :) My kids have been talking of nothing but summer lately, so even though it’s not summer yet, I think this salad will get you in the mood for the warmer months. This is one of my all-time favorite salads. If nothing else, you at least need to make this dressing. It’s to die for! If you are a fan of sweet and savory salads, this one is definitely for you.

Welcome to the new look of Taste and Tell!!  Please bear with me for the next few days as I get used to this new blogging platform and figure out any problems and changes we are dealing with.  I’m so excited for this new change!!  Please let me know if you have any questions or if something is missing or not working.  I know there are a few items we are working on right now, but hopefully everything will but up and working shortly!

This salad – oh, this salad.  I needed to bring a salad to a family get-together, and I flipped open my handy family cookbook.  I couldn’t get past this salad, even though the title says “summer” and it was still winter when I made this.  I don’t know who Steph is, but I am so grateful to her for this salad recipe because it is amazing!!  I am one that loves fruit in my salad anyway, but the combination of the fruits and veggies in this salad, combined with the amazing dressing – this salad is pretty much perfection!

Steph’s Summer Salad

This sweet and savory summer salad is a family favorite - filled with lettuce, fruit, and a sweet and sour dressing. Steph's Summer Salad is sure to become your favorite, too!

Serves: 6-8 servings
Ingredients
Dressing
  • ½ cup vegetable oil
  • 4 tablespoons tarragon vinegar
  • 2 tablespoons Dijon mustard
  • 1 tablespoon sugar
  • 3-4 tablespoons honey
Salad
  • 1 bag (5 oz) Spring Mix lettuce
  • 1 gala apple, thinly sliced
  • ½ small red onion, thinly sliced
  • 2 kiwis, halved and sliced
  • 1 small can (11 oz) mandarin oranges, drained and roughly chopped
  • 3 oz Craisins
  • ¼ cup slivered almonds, toasted
Instructions
  1. To make the dressing, combine all of the ingredients in a blender and blend until combined and creamy.
  2. Combine all of the salad ingredients in a large salad bowl and toss to combine. Pour the dressing over the salad just before serving*.
Notes
*you will probably not need all of the dressing. Store any leftover dressing in a container in the refrigerator.
