An easy lunch or picnic idea – these wraps are filled with chicken, ranch dressing, bacon lettuce and tomatoes.

A little while back, I decided that the kids and I would start having a weekly “field trip.”  Not only would it be a good excuse to get out and see some of the great things around us, but it would be a way to force us to leave the house at least once a week to do something fun.  We’ve been doing it for a couple of months now, and have had some really fun days – anywhere from the museum to flower gardens to the splash pad.

Part of the day’s adventure is to try a new place to eat for lunch.  I was super excited about this idea – because I always want to try restaurants that I see, but since we rarely eat out, there are so many places that go unexplored.  But now, we get to try somewhere out each week.

The disappointing part of this is that we have not had the best luck.  We have to find somewhere that is kid friendly – my kids are only 3 and 1.  And feeding the two of them, plus myself – I have to make sure we go somewhere where we won’t stick out like a sore thumb, because sometimes that in itself is an adventure.

Maybe my expectations have been too high, or maybe I’ve just gotten picky over the years, but in the last few months since we’ve started, we have definitely struck out more than finding delicious food.

Well, a couple of weeks ago, my sister and her kids joined us on our adventure.  We were headed to Bingham Canyon Mine, and decided that instead of finding a restaurant, (she’s been along on 2 of these previous adventures – both where we went to not that great restaurants…) that we would have a picnic at the park before our field trip.  I thought that I might pick up a picnic lunch at a deli, but then decided that we would skip the restaurant for the week and go homemade.  And guess what – not only was this meal way cheaper than eating out, it was the best lunch we had eaten on one of our field trips up to that point!!

These BLT Ranch Chicken Wraps seriously came together in minutes.  A little bit longer if you count the time that it makes to cook the bacon.  But I baked it in the oven earlier that day, so that time totally didn’t even count.  And they are made even faster by using Swanson® Premium Chunk Chicken.  Whether picnicking at the park, or just looking for an easy lunch idea – these BLT Ranch Chicken Wraps will win you over!

BLT Ranch Chicken Wraps

An easy lunch or picnic idea - these wraps are filled with chicken, ranch dressing, bacon lettuce and tomatoes.
Serves: 6 wraps
  • 2 cans (12.5-ounce each) Swanson® Premium Chunk Chicken Breast in Water, drained
  • ¾ cup ranch dressing
  • 6 (12-inch) flour tortillas
  • 6 slices bacon, cooked and chopped
  • shredded lettuce
  • diced tomatoes
  1. Combine the chicken and ranch dressing in a medium bowl.
  2. Lay the tortillas out on a work surface. (If the tortillas aren't very pliable, heat in the microwave to soften so that they will roll without tearing.)
  3. Divide the chicken mixture between the 6 tortillas, placing down the center of the tortilla. Top with the chopped bacon, shredded lettuce and diced tomatoes. Fold in the sides of the tortillas, then roll up. Cut in half to serve.

    This is my kind of food. (Well, minus the chicken these days.) I love the idea of a weekly field trip. Last night my husband and I were talking, and I said “E and I should go somewhere tomorrow, but I have nothing to do.” But I feel like it is so good for her to get out of the house. I need a field trip buddy 🙂

      @Rachel Cooks, getting out once a week definitely saves my sanity – and the kids, too!! Most weeks we go by ourselves, but luckily I do have a lot of family around so we meet up with them sometimes, too. But it’s surprisingly enjoyable when it’s just me and the kids as well!

  21. What fun! I hope that despite the bad restaurants the trips were fun! People are often shocked that I don’t know about every popular restaurant and haven’t eaten at most of them. But the truth is I am disappointed more times than not eating out and I actually rather eat at home because it is cheaper and I can better control what is in my food. AND I love the first picture! What a great idea to take your pic “on location!”
