Creamy, cheesy, and packed with flavor, this Slow Cooker Reuben Dip combines corned beef with cheese, sauerkraut, and thousand island dressing for the ultimate party appetizer. This is great for holidays, game day, or any gathering.

I can never turn down a cheesy dip. Make it one that I can throw all of the ingredients into the slow cooker for and just let it do its thing? I’m sold!
Ok, let me just start off by saying that I know that the reuben sandwich is not Irish. And therefore this Slow Cooker Reuben Dip would not be an Irish recipe. But corned beef is an Irish recipe, and therefore, I would totally be ok with serving this dip up for St. Patrick’s Day.
It’s great for a crowd, and it’s easy to set out so everyone can enjoy. But this would also be a great recipe for the day after St. Patrick’s Day, when you need to figure out what to do with that leftover corned beef.
No matter when you serve it, you’re going to quickly find that you’ll want to find all kinds of excuses to make this because it’s just that good!

Ingredients
- Cream Cheese: I like to use this straight from the refrigerator, because it will melt easier if it is cut into cubes. And it’s easier to cut into cubes cold. It will all melt together, so no need to bring it to room temperature first.
- Swiss Cheese: This brings that classic reuben flavor. If you aren’t a fan of Swiss cheese, you can sub it out, but it really would take away some of that classic flavor.
- Sauerkraut: This is also a classic for reubens. I have made this dip with both the canned sauerkraut and the jarred sauerkraut, and both work just fine. I do drain it and rinse it. You can skip the rinsing for a more prominent flavor, but you will need to drain it either way.
- Corned Beef: I used leftover homemade corned beef. I like to cut it fairly small so that every bite gets some of the corned beef.
- Thousand Island Dressing: I just used store bought thousand island dressing.
- Milk: The milk will thin out the dressing just a little bit to make it the perfect slow cooker consistency.

How to Make Slow Cooker Reuben Dip
STEP 1: Combine all of the ingredients in a slow cooker. I used a 4 quart slow cooker – it will look pretty full to start off with.
STEP 2: Stir everything together as well as possible. At first, before anything has melted, it might be a little hard to do. Cook on low for 4 hours, stirring once or twice during the cook time. Serve with crackers for dipping.

Tips and Tricks
You want to use a slow cooker that is at least 4 quarts. If you want to use a smaller slow cooker, you’ll need to cut the recipe down so that it will fit.
You can serve this with whatever crackers you’d like. I really was hoping to find some rye crackers, but was not successful. It was delicious with a variety of different crackers, though.
This dip will start to separate a bit if left in the slow cooker too long. I like to give it 4 hours to melt completely, but I wouldn’t keep it in for over 8 hours.
Store any leftovers in the refrigerator. It can be reheated, but it’s not as creamy the second time around. (But it’s still equally delicious!)

Slow Cooker Reuben Dip
Ingredients
- 2 (8 oz each) packages cream cheese cubed
- 16 oz shredded Swiss cheese
- 14 oz sauerkraut drained and rinsed
- 6 oz cooked corned beef chopped
- 1 cup thousand island dressing
- 1/4 cup milk
- Crackers for dipping
Instructions
- Combine the cream cheese, Swiss cheese, sauerkraut, corned beef, thousand island dressing, and milk in a 4-quart or larger slow cooker.2 (8 oz each) packages cream cheese, 16 oz shredded Swiss cheese, 14 oz sauerkraut, 6 oz cooked corned beef, 1 cup thousand island dressing, 1/4 cup milk
- Cover and cook on low for 4 hours, or until everything is melted and creamy. Stir 1 -2 times during the cook time to make sure everything melts evenly.
