I have been going back through the archives here on Taste and Tell for quite some time now. As much as I love trying new recipes, or coming up with new recipe ideas, there is just something about going back and remaking some of the many recipes from my blog past. I’ve said it before, but there really are some gems nestled in the past, shadowed by terrible photos and even worse writing.
These Pizza Cups were one such recipe. A not so great photo, and the post was only about a cookbook giveaway. I didn’t even have the recipe included. Well, today that changes. Because everyone needs a pizza cup in their life. 🙂
These Pizza Cups are not only super easy, but the whole family will go crazy for them. They start out with frozen roll dough (I used Rhodes Rolls). You could also use balls of pizza dough.
The filling is very versatile. You can basically do whatever you would do for a normal pizza. I included measurements and instructions for a ground beef version and a pepperoni version, but feel free to go crazy and change up the filling to your favorite pizza toppings.
These Pizza Cups are perfect for pizza night, or for a great after school snack. We have pizza night often, and I love this idea as a way to change it up from your typical pizza night. They are a great way to reinvent that pizza!

Pizza Cups

Description
The kids will love these fun Pizza Cups – an easy twist for pizza night! They are also great for lunch on the go or for after school snacks!
Ingredients
Cups:
- 12 frozen dinner rolls, thawed to room temperature (such as Rhodes)
For the beef cups*:
- 1 lb ground beef
- 1 cup pizza sauce
- 1 teaspoon Italian seasoning
- salt and pepper
- 1 cup grated Mozzarella cheese
For the pepperoni cups*:
- 6 oz. pepperoni slices, cut into fourths
- 1 cup pizza sauce
- 1 cup grated Mozzarella cheese
Instructions
Preheat the oven to 350º. Spray a 12-cup muffin tin with nonstick cooking spray. Set aside.
Spray a counter lightly with nonstick cooking spray. Flatten each of the rolls out into a 5-inch circle. Cover with a piece of plastic wrap that has been sprayed with nonstick cooking spray.
If you are making the beef cups:
Brown the ground beef in a skillet over medium-high heat, breaking it up as it cooks. Once it is no longer pink, stir in the pizza sauce, Italian seasoning and salt and pepper to taste. Turn off the heat.
If you are making the pepperoni cups:
In a bowl, combine the pepperoni and pizza sauce and stir.
Remove the plastic wrap from the dough and evenly press one piece of dough into the bottom and up the sides of each muffin cup, forming a bowl. Sprinkle half of the cheese in the bottom of the cups. Top with the beef or pepperoni filling, filling each cup evenly. Top each cup with the remaining cheese.
Bake in the preheated oven until the cups are baked and browned and the cheese has melted, about 20 to 25 minutes.
Recipe Notes:
*each of the filling recipes are for 12 cups. So to do both, you would need 24 dinner rolls. The fillings can easily be halved so that you can have 6 of each flavor.
