This Cinnamon Banana Bread is a soft, moist banana bread that is swirled with a rich layer of cinnamon sugar and finished with a sweet, crunchy cinnamon sugar topping. This is the perfect treat for breakfast, brunch, or as a snack!

I am a believer that there is no such thing as too many banana bread recipes.
I mean, you could stick with regular banana bread, but sometimes, you just need to change things up!
This Cinnamon Banana Bread is definitely one of those ways to step away from your regular. The cinnamon sugar brings a delicious warmth, and that crumbly cinnamon sugar topping is everything!

Ingredients
- Cinnamon and Sugar: You will make a cinnamon sugar mixture that is used in the middle of the bread as well as on the top. It is just regular granulated sugar and cinnamon.
- Flour: I use all-purpose flour.
- Baking Soda: The baking soda is necessary for texture and lift.
- Salt: The salt is not only important for flavor, but it also is important for the texture of the bread.
- Butter: I like to use unsalted butter. Make sure it is at room temperature so that it will mix in easily.
- Brown Sugar: You will use brown sugar in the bread. I use light brown sugar.
- Eggs: You need large eggs. They incorporate best if they are at room temperature.
- Bananas: This recipe uses my banana bread as a base, which uses a lot of bananas. You will need 4-5 over-ripened bananas. Measure them once they are mashed.
- Vanilla: Use a good quality vanilla extract for the best flavor.

How to Make Cinnamon Banana Bread
STEP 1: Mix together your cinnamon sugar mixture. Set this aside – you’ll need it when you assemble the bread.
STEP 2: In a bowl, whisk together the dry ingredients. This is the flour, baking soda, cinnamon, and salt.

STEP 3: In another bowl, beat the butter and sugar, then mix in the eggs. Add the mashed bananas and the vanilla.
STEP 4: Mix the dry ingredients into the wet ingredients. Only mix until it is combined.

STEP 5: To assemble, pour half of the batter into a prepared loaf pan. Top with half of the cinnamon sugar mixture, then use a butter knife to drag the cinnamon sugar through batter. You only want to make 3 to 4 swipes – don’t go crazy.
STEP 6: Add the remaining batter, then the remaining cinnamon sugar. Drag your knife through the batter again. Bake the bread until a tester inserted in the center comes out clean.

Tips and Tricks
I like to line the pan with parchment paper. That way, I can lift it out without losing the cinnamon sugar topping. If you just grease the pan, you may have to turn it upside down and some of the topping may fall off.
Make sure you are using a 1 pound loaf pan. If you loaf pan is smaller, the batter will not fit.
You don’t have to swirl the cinnamon sugar mixture. It just helps it to stay in place better, so I like to do it.
This bread is best eaten within 1-2 days. It will last longer, but because there are so many bananas in the bread, it will start to get gummy.

Cinnamon Banana Bread
Ingredients
Cinnamon Sugar:
- 1/2 cup sugar
- 1 tablespoon cinnamon
Bread:
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/2 cup butter at room temperature
- 3/4 cup packed light brown sugar
- 2 large eggs
- 2 cups mashed overripe bananas (about 4-5 bananas)
- 1 tablespoon vanilla extract
Instructions
- Preheat the oven to 350ºF. Lightly grease a 1 pound loaf pan or line with parchment paper.
- In a small bowl, combine the sugar and the cinnamon.1/2 cup sugar, 1 tablespoon cinnamon
- In a bowl, whisk together the flour, baking soda, cinnamon, and salt.2 cups all-purpose flour, 1 teaspoon baking soda, 1 teaspoon cinnamon, 1/4 teaspoon salt
- In another bowl, beat the butter and the sugar until fully combined. Mix in the eggs.1/2 cup butter, 3/4 cup packed light brown sugar, 2 large eggs
- Add the bananas and the vanilla and mix until combined. Mix in the dry ingredients.2 cups mashed overripe bananas, 1 tablespoon vanilla extract
- Pour half of the banana batter into the prepared loaf pan. Sprinkle half of the cinnamon sugar over the top. Use a knife to gently swirl the cinnamon sugar, only making 3-4 swipes.
- Pour the remaining batter over the top, then sprinkle the remaining cinnamon sugar over the top of the loaf. Make another 3-4 swipes, dragging the knife through only the top inch.
- Bake until a tester inserted in the middle comes out clean, about 1 hour.
- Let the bread cool before removing from the pan and cutting into slices.
