Ingredients
Cinnamon Sugar:
1/2cupsugar
1tablespooncinnamon
Bread:
2cupsall-purpose flour
1teaspoonbaking soda
1teaspooncinnamon
1/4teaspoonsalt
1/2cupbutterat room temperature
3/4cuppacked light brown sugar
2large eggs
2cupsmashed overripe bananas(about 4-5 bananas)
1tablespoonvanilla extract
Instructions
Preheat the oven to 350ºF. Lightly grease a 1 pound loaf pan or line with parchment paper.
In a small bowl, combine the sugar and the cinnamon.
1/2 cup sugar, 1 tablespoon cinnamon
In a bowl, whisk together the flour, baking soda, cinnamon, and salt.
Pour half of the banana batter into the prepared loaf pan. Sprinkle half of the cinnamon sugar over the top. Use a knife to gently swirl the cinnamon sugar, only making 3-4 swipes.
Pour the remaining batter over the top, then sprinkle the remaining cinnamon sugar over the top of the loaf. Make another 3-4 swipes, dragging the knife through only the top inch.
Bake until a tester inserted in the middle comes out clean, about 1 hour.
Let the bread cool before removing from the pan and cutting into slices.
