Smoky bacon, juicy beef, and melty cheese all come together in these family-favorite Bacon Cheeseburger Quesadillas. Served with a creamy, tangy special sauce, these quesadillas are irresistible!

I’ll just tell you – if you are on the lookout for a great fast and easy weeknight dinner for the nights when you don’t feel like cooking, I’ve got you covered. These Bacon Cheeseburger Quesadillas have all of the goodness of a cheeseburger, wrapped up in a tortilla and grilled to perfection. Seriously – keep this on on hand. You’ll thank me for it!

Ingredients
- Mayonnaise: The is the base of your special sauce. You can always sub in Greek yogurt if you want to cut back on calories or increase protein.
- Ketchup: You will need ketchup for both the special sauce and the filling for the quesadillas.
- Pickles: This is for the special sauce. You can swap in dill pickle relish if you have it on hand, but I usually just chop up some pickles.
- Mustard: Again, you will need this for both the filling and the sauce. You need just regular yellow mustard.
- Vinegar: The best vinegar to use here is just white vinegar. You can test out other vinegars, if desired, though.
- Spices: You will need onion powder and garlic powder for the sauce, as well as salt and pepper. You can also add salt and pepper to the filling, but I find that it is usually not necessary.
- Bacon: I just use a regular cut of bacon. I like to dice the bacon and cook it, but you can also cook the strips and then crumble the bacon.
- Ground Beef: I like to use a 80% or 85% blend for flavor.
- Worcestershire Sauce: This just adds some depth to the filling.
- Butter: This is just for cooking the quesadillas. The butter will help them to brown up an get nice and crispy.
- Tortillas: You want to use soft taco sized tortillas, which are usually around 8 to 9 inches in diameter. You can use bigger or smaller tortillas, but you will want to make sure you adjust the filling accordingly.
- Cheese: I like to use medium cheddar cheese, but really, any cheddar should work. You could even use Colby jack.
- Lettuce and Tomatoes: If you want the full bacon cheeseburger experience, I suggest serving your quesadillas with some lettuce and tomatoes. If you want to keep them completely hand held, you can leave these off.

How to Make Bacon Cheeseburger Quesadillas
STEP 1: Mix together all of the sauce ingredients. I like to do this first so that I can refrigerate the sauce for a bit to let it all meld together.
STEP 2: Not pictured, but first cook your bacon. Once it is crisp, remove it from the skillet and drain all of the grease but about 1 tablespoon. Add the ground beef and cook until it is browned and cooked through.

STEP 3: To the skillet, add the cooked bacon, ketchup, mustard, and Worcestershire sauce.
STEP 4: Stir this all together. Let it cook for a couple of minutes to heat through.

STEP 5: Melt half of the butter in another skillet, Add a tortilla, and top with cheese, some of the filling, then more cheese. Fold the tortilla over.
STEP 6: Repeat with another tortilla and let these cook until golden brown and until the cheese is melted, flipping them once during the cook time. Once done, remove, cut into triangles, and serve.

Tips and Tricks
If you want to cut back on fat or calories, you can make these without the special sauce. They are still delicious!
I like to use my cast iron skillet to cook the beef mixture, but then I like to use a nonstick skillet to cook the quesadillas.
These are best eaten the day they are made, but if I have leftovers, I wrap them in foil, then reheat in the air fryer.

Bacon Cheeseburger Quesadillas
Ingredients
Special Sauce:
- 1/2 cup mayonnaise
- 2 tablespoons ketchup
- 2 tablespoons minced dill pickles
- 2 teaspoons yellow mustard
- 1 teaspoon white vinegar
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
Quesadillas:
- 1/2 pound bacon diced
- 1 pound ground beef
- 2 tablespoons ketchup
- 2 tablespoons yellow mustard
- 1/2 tablespoon Worcestershire sauce
- 1 tablespoon butter
- 4 8 to 9-inch flour tortillas
- 6 oz shredded cheddar cheese
- Shedded lettuce and diced tomatoes optional
Instructions
- In a bowl, combine all of the sauce ingredients. Whisk well, then refrigerate until needed.1/2 cup mayonnaise, 2 tablespoons ketchup, 2 tablespoons minced dill pickles, 2 teaspoons yellow mustard, 1 teaspoon white vinegar, 1/2 teaspoon onion powder, 1/2 teaspoon garlic powder, Salt and pepper
- In a large skillet, cook the bacon until crisp. Remove with a slotted spoon to a paper towel lined plate. Drain off all the bacon grease except about 1 tablespoon.1/2 pound bacon
- Add the ground beef to the same skillet with the bacon grease. Cook, breaking it up as it browns, until it is cooked through.1 pound ground beef
- Add the cooked bacon, ketchup, mustard, and Worcestershire sauce. Stir for a few minutes until fully warmed through.2 tablespoons ketchup, 2 tablespoons yellow mustard, 1/2 tablespoon Worcestershire sauce
- Heat another skillet over medium heat. Add half of the butter and allow it to melt. Place one tortilla in the pan and sprinkle some of the cheese onto half of the tortillas. Add 1/4 of the beef mixture, followed by more cheese. Fold the tortilla over, and move the quesadilla to one side of the skillet. Repeat with another tortilla and filling, so that you are cooking 2 quesadillas at a time.1 tablespoon butter, 4 8 to 9-inch flour tortillas, 6 oz shredded cheddar cheese
- Cook until golden brown and until the cheese starts to melt, the gently each quesadilla over. Continue to cook until the second side is browned and the cheese is melted, then remove from the skillet. Repeat with the remaining ingredients.
- Slice each quesadilla into triangles, then serve with lettuce, tomato, and the special sauce.Shedded lettuce and diced tomatoes

Seriously, I’ve got an abundance of tortillas in my house right now because we went to Cosco last weekend and I keep thinking up things to use them for. Not like it’s hard, but I like trying new things. I’m actually making Rachael’s Mexican Lasagna next Tuesday for our Mexican night…but I think these will have to make the list for the week after. Oh…speaking of Rachael…we made her Chipotle Turkey Chili with Apples and Cheddar last night for our Halloween Chili–if you haven’t made it yet, YOU’VE GOT TOO! It is so so good! I made it with only 1 lb of ground turkey…so Josh suggested (cause we like to try and make our meat stretch…budget ya know) adding frozen corn and beans to it. So I’m going to try that next, but I’m telling you…it is super good. All of our family that came over last night was oohing and aaahing over how good it smelled in my kitchen. Try it!!
