Day 3 of garden week! This Zucchini and Yellow Squash Soup is a great way to use up a lot of that garden fresh produce that gets to be so abundant! This is a simple soup that tastes so fresh!
Zucchini and Yellow Squash Soup
Put that garden fresh produce to work in this flavorful Zucchini and Yellow Squash Soup! It’s super easy and great way to use an abundance of produce!
Ingredients
- 2 tablespoons olive oil
- 1 tablespoon butter
- 1 yellow onion chopped
- 1 tablespoon minced fresh garlic
- 4 teaspoons chopped fresh rosemary
- 3 lbs. diced green & yellow summer squash
- 8 cups chicken stock
- salt and pepper
- fresh grated Parmesan cheese
Instructions
- Heat olive oil and butter in a large heavy soup pot, then add onion and saute about 5 minutes, or until onion is translucent. Add garlic and rosemary and cook 3-5 minutes more.
- Add chicken stock and simmer 10 minutes. Then add the chopped squash, season to taste with salt and pepper, turn heat to low and simmer for 30 minutes, until squash is soft and the flavors are blended.
- Use an immersion blender or a food processor to puree the soup. When mixute is pureed, simmer the soup for an additional 20 minutes, or until the soup is reduced by one-fourth and slightly thickened.
- Serve soup hot with grated Parmesan on top.

Would love to try this. Have you tried roasting the squash (and possibly garlic and onions) before hand? I think it would give it a deeper flavor. Wanted to check first to see if there were any other tips and tricks.

Hi Dawn, I haven’t made this recipe for quite some time, so I don’t have any other tips right now. But I do think that roasting the vegetables would definitely deepen the flavor! You’ll have to let me know if you try it and how it turns out! (I do have a commenter that said they added jalapeno – that would be great if you want a little kick!)

My harvest of 6 yellow squash and 6 zucchini plants in my COVID 2020 garden has been unbelievable. I had given so much away and had my share of eggs, pizza and pasta sauce with Yellow squash and Zucchini, i had to transition. This soup was easy peasy to make,
i received some jalapeno’s from a friend so chopped up about 1/4 inch in lieu of the pepper.
