Celebrate St. Patrick’s Day with these Lucky Charms Cookies. They are soft cookies packed with white chocolate chips and colorful Lucky Charms marshmallows, then topped with a fluffy marshmallow buttercream for a magically sweet dessert.
As much as I love a good sugar cookie or chocolate chip cookie, sometimes you need to go all out. And these Lucky Charms Cookies are a great way to level up!

When it comes to celebrating a holiday, what better way to celebrate than with cookies?
Ok, ok. I know these Lucky Charms Cookies aren’t Irish. And some will say that Lucky the Leprechaun isn’t even Irish. But I say these cookies are delicious and festive and I’ll happily make them for St. Patrick’s Day!
I actually got the idea for this cookie from Crumbl. They have a Lucky Charms cookie around St. Patrick’s Day, and I thought it would be a fun cookie to make. But this one is even better because it has the Lucky Charms marshmallows in the cookies.
These cookies disappeared so fast from our house. They are sure to become a holiday favorite!

Ingredients
- Butter: You will need butter for both the cookies and the frosting. I like to use unsalted butter so I can control the amount of salt better.
- Sugar: You will need granulated sugar for the cookies, then powdered sugar for the frosting.
- Eggs: I use large eggs. Make sure they are at room temperature for the best results.
- Vanilla: Again, you will need vanilla for both the cookies and the frosting. Use a pure vanilla extract for the best flavor.
- Baking Powder and Salt: These are both important for the texture of the cookies. The salt also helps to balance the flavors.
- Flour: I use all-purpose flour.
- White Chocolate Chips: If you want a cookie that is a little less sweet, you can leave these out. But my family all agreed that they like them better with them!
- Lucky Charms Marshmallows: If you can find the bags of just marshmallows, that makes this a little easier, but I just picked the marshmallows out of the cereal.
- Marshmallow Creme: I can only find marshmallow creme where I live, but you should also be able to sub in marshmallow fluff if that is what you have.
- Milk: You may not need the milk. I like to mix the frosting together, and if it is too thick for spreading, then you can add a little bit of milk to loosen it up.

How to Make Lucky Charms Cookies
STEP 1: Beat the butter and sugar together. You want this to be nice and light and fluffy.
STEP 2: Mix in the eggs, then the vanilla extract. Mix in the baking powder and salt, then add the flour.
STEP 3: Mix this all together until combined. The dough should be fairly thick.
STEP 4: Add the white chocolate chips and the Lucky Charms marshmallows and mix just until combined. Form the dough into large balls, about 1/3 cup each, then flatten the dough out some to make a disc. Place these on 2 baking sheets – 6 cookies per sheet, and bake until the bottoms are just golden brown.

STEP 5: To make the frosting, beat the butter and marshmallow creme, then mix in the salt and vanilla.
STEP 6: Add in the powdered sugar, 1/2 cup at a time, until the sugar has all been aded. If the frosting is too thick, add in some of the milk.
STEP 7: If desired, add in a couple drops of food coloring. This is totally optional!
STEP 8: Top each cookie with some Lucky Charms cereal and serve!

Tips and Tricks
Make sure you mix the marshmallows in by hand, as if you are still using the mixer, it breaks the marshmallows up too much.
If you aren’t serving the cookies the same day, don’t add the cereal to the top. It will get super soft. I would suggest frosting and add the cereal right before serving.
You can store these in the refrigerator or covered at room temperature. I like to eat them both at room temperature and chilled!

Lucky Charms Cookies
Ingredients
Cookies:
- 1 cup unsalted butter
- 1 cup granulated sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 3 cups all-purpose flour
- 1 cup white chocolate chips
- 1 cup Lucky Charms marshmallows
Frosting:
- 1/2 cup unsalted butter
- 1/2 cup marshmallow creme
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 2 cups powdered sugar
- 1 tablespoon milk optional, if needed
- 2-3 drops green food coloring optional
- Lucky Charms cereal & marshmallows for decorating
Instructions
- Preheat the oven to 350ºF. Line 2 baking sheets with parchment paper or a silpat liner.
- In the bowl of a stand mixer, or in a large bowl, beat the butter and sugar together until light and fluffy.1 cup unsalted butter, 1 cup granulated sugar
- Beat in the eggs and the vanilla extract, scraping down the sides of the bowl as needed.2 eggs, 1 teaspoon vanilla extract
- Mix in the baking powder and salt, then add the flour and mix just until combined.2 teaspoons baking powder, 1/2 teaspoon salt, 3 cups all-purpose flour
- Add the white chocolate chips and marshmallows, and mix in with a spatula. (If you do this in the mixer, the marshmallows will get broken up more than if you do it by hand.)1 cup white chocolate chips, 1 cup Lucky Charms marshmallows
- Form the cookie dough into balls that weigh about 3.2 ounces each, about 1/3 cup of dough. Form each into a ball, then flatten slightly into a disc and place on the prepared baking sheets, 6 cookies per sheet.
- Bake until the edges are lightly golden brown and the cookies are just set in the center, about 15 minutes.
- Remove from the oven and let the cookies cool on the baking sheet.
- To make the frosting, combine the butter and marshmallow creme in a bowl and beat to combine. Beat in the vanilla and the salt.1/2 cup unsalted butter, 1/2 cup marshmallow creme, 1 teaspoon vanilla extract, 1/4 teaspoon salt
- Start adding the powdered sugar, 1/2 cup at a time, until it has all been incorporated. If the frosting is too thick, add the milk, 1 teaspoon at a time, until you reach your desired consistency. Beat in the food coloring, if adding.2 cups powdered sugar, 1 tablespoon milk, 2-3 drops green food coloring
- Frost the cooled cookies with the frosting, and top each with a few pieces of cereal and a few marshmallows.Lucky Charms cereal & marshmallows
