This Buffalo Chicken Salad was a surprise favorite in our house. We all tend to like anything buffalo chicken, but two of my kids devoured this. And the leftovers.
In fact, when it was out, my son asked for the recipe so he could make more for lunch since he loved it that much!
I love that it is so easy to make, and that it’s so fast to make. This is prefect for dinner or lunch!
Ingredients
- Mayonnaise: You can use full fat, low fat, avocado mayo, or really any mayo you want.
- Greek Yogurt: You want plain greek yogurt. I usually use nonfat, but you could use 2% or whole milk yogurt to make it even creamier.
- Buffalo Sauce: I like to use traditional buffalo sauce, not wing sauce. But you could really get away with using either.
- Spices: You’ll use a ranch-inspired seasoning mix, including garlic powder, onion powder, and dill. You will also want to season to taste with salt and pepper.
- Chicken: For this recipe, you need cooked, shredded chicken. You can make this yourself, or you can pick up a rotisserie chicken. I like to chop it a bit once shredded to get smaller, more even pieces.
- Veggies: I like to include carrots and celery, since that is traditionally what buffalo wings are served with. I also like a little bit of onion flavor, so I add in some green onions.
- Blue Cheese: This is optional, but I love blue cheese with buffalo chicken, so I like to add some on top.
How to Make Buffalo Chicken Salad
STEP 1: To make this all in one bowl, start by making the dressing in a large bowl. Simple combine the mayonnaise, yogurt, buffalo sauce, and spices and stir to mix.
STEP 2: Add in the chicken, carrots, celery, and green onions to the dressing.
STEP 3: Stir everything together until the chicken is coated with the dressing. You’re already ready to serve!
Tips and Tricks
We like to eat this with crackers, or as a sandwich, usually on croissants. It is delicious just by itself, too, and I have eaten it just with a fork!
This is great for meal prep. It keeps several days in the refrigerator. I will store the chicken salad by itself, then add the croissant or crackers when its time to serve.
You can add more or less buffalo sauce, depending on how spicy you like it.
