An easy grilled dinner that’s packed with flavor, these Bang Bang Chicken Skewers are great for the whole family! With just the right amount of heat and the perfect dipping sauce, this chicken dinner will become a dinner that is on repeat.

If you can’t tell, I’ve been totally into grilling this summer. I love that I don’t have to heat up my kitchen, and the messes are usually minimal. And you can’t beat how fast most grilling recipes are!
One of our recents favorites are these Bang Bang Chicken Skewers. They make a perfect weeknight meal – from start to finish, it’s only about 40 minutes. And I always love a little spice!
Ingredients
- Chicken Thighs: I like using chicken thighs because they are easier to cook and they have more flavor than chicken breasts. But if you do want to use breasts, you totally can! Just be careful as you are cooking them, as they will dry out and overcook easier.
- Oil: This is just to ensure that the spices stick to the chicken, and that the chicken doesn’t stick to the grill. I used olive oil, but a neutral oil, like vegetable oil or avocado oil will work as well.
- Spices: For the chicken, I used a mixture of paprika, garlic powder, onion powder, salt, and pepper.
- Mayonnaise: I typically use full fat mayonnaise, but low-fat could be used.
- Thai Sweet Chili Sauce: I usually use the Mae Ploy Sweet Chili Sauce, but there are lots of brands out there.
- Lime Juice: I like to use fresh lime juice. If you don’t have it, you can leave it out.
- Sriracha: Add as little or as much as you want, depending on the spice level you prefer.
How to Make Bang Bang Chicken Skewers
STEP 1: Put your chicken in a large bowl, then add the oil and the spices. Mix until the chicken is evenly coated in the spices.
STEP 2: Thread the chicken onto skewers. The amount of chicken you put on each skewer depends on the size. I have larger metal skewers, and since there are 5 of us, I just use 5 skewers and evenly divide the chicken. But if you are using smaller skewers, you will make more.
STEP 3: Mix all of the sauce ingredients together. Divide the sauce in half. Refrigerate one half, (you’ll use this for serving).
STEP 4: Grill the chicken over medium-high heat, turning every 4-5 minutes. When it is almost cooked through, start basting the chicken with the half of the sauce that you did not set aside. When it’s cooked through, remove from the heat and serve with the reserved sauce.
Tips and Tricks
If you are using wooden skewers, you’ll want to soak them in water for about 30 minutes before grilling.
While I love these kabobs grilled the most, you can also cook them in the air fryer, in the oven, or on a grill pan. If using an air fryer, you will want to make sure your skewers fit in the air fryer.
This makes a good amount of sauce, perfect for dipping or for drizzling over the chicken and rice.

Bang Bang Chicken Skewers
Ingredients
- 2 pounds chicken thighs cut into bite sized pieces
- 1 tablespoon olive oil
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 1 cup mayonnaise
- 2/3 cup thai sweet chili sauce
- 2 tablespoons fresh lime juice
- 4 teaspoons sriracha or to taste
Instructions
- Place the chicken in a large bowl. Add the olive oil, smoked paprika, garlic powder, onion powder, salt, and pepper. - Thread the chicken onto skewers. (How many skewers you make will be determined by how big the skewers are.) Set aside.
- In a bowl, mix together the mayonnaise, Thai chili sauce, lime juice, and sriracha. Take about half of the sauce and set aside. Cover and refrigerate the remaining sauce.1 cup mayonnaise, 2/3 cup thai sweet chili sauce, 2 tablespoons fresh lime juice, 4 teaspoons sriracha
- Heat a grill over medium-high heat. Add the skewers and cook, turning every 4-5 minutes, until cooked through. This should take about 15 minutes total.During the last 3-4 minutes, brush the chicken with the bang bang sauce that you set aside.
- When done, remove from the grill. Serve the skewers with the remaining bang bang sauce for drizzling or dipping.
