My husband is an oat addict. He’ll go between phases of lots and lots of overnight oats, to lots and lots of stovetop oats.
So when I first started making this baked oatmeal, he was in heaven. And he still gets super excited whenever I go to make this! I love that it’s a good, hearty breakfast, and that it’s a breakfast my whole family loves. I also love that it only takes about 5 minutes to throw everything together!

Ingredients
- Oats: You will need old fashioned oats. Quick oats will work, as well, but the baking time may need to be adjusted.
- Pecans: I like the flavor and texture of added nuts. But if you don’t like them, you can simply leave them out.
- Cinnamon and Nutmeg: These are both just for flavoring, and they give the oatmeal some warmth.
- Baking Powder: This will help with texture.
- Salt: You need salt to help balance the flavors.
- Milk: I will typically use 2% milk because that is what I keep on hand. But you could also use whole milk.
- Maple Syrup: This is real maple syrup, not pancake syrup. I have only tested with real maple syrup, so I’m not sure what other sweeteners would work.
- Eggs: You need 2 large eggs.
- Butter: The butter needs to be melted before adding. I use unsalted butter.
- Yogurt: I like to add a little bit of Greek yogurt for texture as well as little bit of extra protein.
- Vanilla: Use a good vanilla extract for the best results.
- Berries: I like to use fresh berries when possible, but frozen will also work. If using frozen, you don’t need to thaw them first – just add them in frozen.

How to Make Baked Oatmeal
STEP 1: Combine all of the dry ingredients in a large bowl. This is the oats, pecans, cinnamon, baking powder, salt, and nutmeg.
STEP 2: Add in your wet ingredients – the milk, maple syrup, eggs, melted butter, Greek yogurt, and vanilla. Mix this all to combine.

STEP 3: Reserve 1/2 cup of berries, and add the additional berries into the oatmeal mixture. Fold them in gently.
STEP 4: Pour the mixture into your baking dish. Top with the remaining berries. Bake until it is barely set in the middle. Serve warm.

Tips and Tricks
I like to top mine with a dollop of vanilla yogurt. It adds extra flavor and sweetness.
I like to bake this without parchment paper in the baking dish, because the edges get a little crispy, and that’s my favorite part. They don’t get as crispy when you use parchment paper.
Any leftovers can be refrigerated and reheated in the morning.
