    Dear Paula Deen,

    First of all, let me apologize for saying that your newest cookbook – The Deen Family Cookbookwas hit and miss. I did try many recipes from it before I made that statement, but I hadn’t tried this recipe yet. And let me tell you – this recipe is reason alone to buy this cookbook. Sure, it’s not even close to healthy, but really – do we really expect healthy from the queen of butter? But next time I’m looking for comfort on a plate, I’ll be opening this book up to this recipe and making myself a big bowl of this delicious pasta. It really is one of the most delicious pasta dishes I’ve tried lately! Thank you for making me once again believe in Paula Deen!

    Smoky Tomato-Bacon Pasta
    from The Deen Family Cookbook

    Serves 4 to 6

    1/2 pound bacon (about 10 slices)
    1 large yellow onion
    One 28-ounce can diced tomatoes, drained
    salt and pepper
    4 ounces cream cheese, cut into pieces
    1 pound uncooked pasta

    In a large skillet, cook the bacon until crisp and brown. Transfer it to a paper towel lined plate. Pour off all but 1/4 cup fat from skillet.

    Add the onion and cook over medium heat, stirring occasionally, until softened, 5 to 7 minutes. Stir in the diced tomatoes, then crumble in the bacon. Season with salt and pepper; simmer, stirring occasionally, until thick and chunky, about 10 minutes. Stir in the cream cheese until melted.

    Meanwhile, in a large pot of boiling salted water, cook the pasta according to the package directions. Drain and transfer to a large bowl. Toss with the sauce and serve immediately.

  2. Don't you kind of kick yourself when you find recipes like this that are sooo simple but so unbelievably good??
    I know I always do.. Like "Why didn't I think of that!"

  8. HA! Very funny! I was wondering what to make for dinner and had decided on pasta but wasn't certain what recipe. I'll let you know how three (my kiddos)very different palates like it!

  9. Hi, Deborah! I'm getting ready to clean up the kitchen from dinner. The kids enjoyed this and there were NO complaints from the three of them! Yay! I did change things a bit but more in the way of additions. I added some garlic paste (what's italian without it?) and freshly grated parm cheese as the end with a sprinkling of dried Italian herbs.

  12. I made this last night! I didn't have diced tomatoes so I used rotel tomatoes, It was good, but I would rather regular diced tomatoes next time! I added some basil and sundried tomato cheese! YUMM! Thanks!

  19. I make this all the time, but I have always made it and I am surprised seeing it on here. :) I make mine with Chipotle for a kick. Great simple recipe…that everyone loves.

  20. I make this all the time and have for many years. So I am a little surprised to see this on here. :) I also add chipotle to kick it up a bit. Everyone loves this and it is a quick last minute meal as well.
