    I am in Spring cleaning mode. I know it’s the middle of the summer, but I have the cleaning bug. The majority of this is wanting to clean things out and get rid of everything we don’t use. We have too much stuff!!

    The biggest part of this has been wanting to clean out the fridge, freezer, and pantry. One of these days, I would love to have a huge, extra freezer in the garage where we can freeze all of our leftovers. But for now, all I have is the freezer that is with my fridge, and it’s a fairly small freezer!! When we bought our house about a year and a half ago, we remodeled everything. I love my kitchen (even though it’s still not finished), but if there is one thing I wish we would have done, it would have been to make the spot for the fridge bigger. Our house built in the 50′s, so the spot where the fridge goes is not as big as the refrigerators they make these days. So although my fridge is new, it is the smallest model that is made. So we’ve been eating frozen enchiladas, going through the frozen meats, and trying to clear out everything that has been in there for ages.

    I decided to tackle the pantry as well. It is filled with many items that I use a lot, and that I am always replenishing, but I have a lot of items that have been on those shelves for ages. Some things that I bought, intending to use them for a recipe that never got made, and many things that I think I bought just because they were on sale. So when I saw these cookies on Becke’s blog, I thought it would be a perfect way to use some cake mixes that were coming up on their expiration dates. I have made cake mix cookies before, although it’s been ages. I adapted them just a bit from Becke’s recipe. I first made strawberry. I used the recipe I typed below, but the dough seemed very oily, so I decided that I would cut the oil a bit for my chocolate batch. While they both tasted very good, I liked the texture of the strawberry cookies better. The chocolate cookies did not spread like the strawberry cookies – instead they stayed in a little puffy ball. My husband did not have any the night I made them, but I put a couple of them in his lunch the next day. I got a text message half way through the day claiming that he thought the strawberry cookies were in his top 5 favorites! I probably wouldn’t go that far, (they do taste like artificial strawberry), but I still enjoyed them. And I took a bunch to work and they all got eaten, even though half of the people in my office are doing a weight loss contest. (I’m the devil, aren’t I!!??) So, if you need some cookies in a hurry, this is a good recipe to turn to.
     


     

    Prep Time: 5 minutes

    Cook Time: 10 minutes

    Total Time: 20 minutes

    These super easy cookies start with a cake mix. Change up flavors and add ins to your favorite flavors.

    Ingredients

      Strawberry
    • 1 strawberry cake mix
    • 2 eggs
    • 1/2 cup vegetable oil
    • 1/2 cup coconut
    • Chocolate
    • 1 chocolate cake mix
    • 2 eggs
    • 1/2 cup oil
    • 1/2 cup mini chocolate chips

    Instructions

    • Mix eggs and vegetable oil until well combined. Stir in cake mix and add ins; drop by teaspoons onto greased cookie sheet. Cook for 8-10 minutes at 350 F.

  7. I have a recipe very similar to this but for some reason it adds a 1/4 cup sugar. I leave that out. My aunt used to make these chocolate chip cookies that I thought were divine…turns out they were just butter cake mix cookies with CC in them! I think this is best with lemon or strawberry mix.

  10. Does anyone know how many cups are in a box of cake mix? I have some leftover cake mix from making cake batter rice krispee treats and I was thinking I could cut this recipe in half to use up my leftovers. But I’m not sure how many cups equals half a box of cake mix…

    @Leah, I’m not sure how many cups there are, but if you have a kitchen scale, the weight should be on the box. That might be the easiest way to figure it out. Good luck!!

  13. Can I make the strawberry ones without the coconut? Is there something I can substitute for it. I want to make these for Christmas, but I have a few guests that do not like coconut. I was going to make both the choc and the strawberry.

  14. I make a similar cookie, but instead of oil, I use one cube of butter, softened in the microwave to almost melting… yummy!

    When I make the chocolate ones I add chocolate chips. Sometimes I don’t then I will make a thick cream cheese frosting and put 2 cookies together.

    My kids love it when I do Funfetti cake cookies.

  15. Try this one! White cake mix, 2 eggs, 1/2 cup oil, 1/2 cup chopped Candied cherries, 1 cup of chopped pecans and 1 1/2 cups of White chocolate morsels. Mix well, using a tablespoon drop on cookie sheet lined with parchment paper. I usually roll them in the palm of my hands. Bake at 350 for 10 to 12 minutes. My husband loves them. The guys that I work with really love them, too.

  16. I make something similiar as well. The recipe calls for Cool Whip and an egg added to the mix – then rolled in powered sugar! Yummy.

    I have used a Cherry Chip mix and a Lemon Mix – we call them Snowflake cookies but love them anytime of the year!

  18. Lori…I got the same receipe from a friend of mine that owned his own bakery. 1 cake mix, 1 egg, 2 cups of Cool Whip rolled into powdered sugar. I take different flavors and add things, like peppermint candies crushed into chocolate cake mix. The lemon ones are the ones my friends love…I add lemon zest and juice of the lemon for that extra punch!

    @Makyla Molina, I haven’t tried freezing these before, but they really only take 5 minutes to mix the ingredients together. It probably won’t save much time to freeze just the dough. If you do try freezing the cookies, let me know how it turns out!
