Perfectly peppermint, these Peppermint Rice Krispie Treats are a fun Christmas twist on a classic favorite. They only take minutes to make and are a fun treat for any holiday occasion.

I love all of the holiday treats. And all of the holiday baking.
But sometimes, you need something festive and easy. Not to mention – delicious!
I’m obsessed with peppermint, especially around Christmas. So of course, combining peppermint and rice krispie treats is a no brainer. These Peppermint Rice Krispie Treats have the perfect amount of peppermint and little bit of crunch from the candy canes. They are holiday perfection!

Ingredients
- Crispy Rice Cereal: aka – Rice Krispies cereal.
- Marshmallows: Make sure your marshmallows are fresh for the best results.
- White Chocolate Chips: I like that these add a little something extra. You can leave them out, but they are a delicious surprise.
- Candy Canes: You will need a total of 6 candy canes. I put 4 of the candy canes in the rice krispie treats, and the remaining 2 will go on top. I put the unwrapped candy canes in a ziplock bag and use a mallet to break them up. You could also use a blender or food processor, but you don’t want to break them up too much.
- Butter: I use unsalted butter. If you do use salted butter, you can leave out the pinch of salt.
- Peppermint Extract: I think 1 teaspoon of peppermint extract gives these bars the perfect amount of peppermint – not overwhelming at all. If you want a stronger peppermint flavor, you can add more extract.
- Salt: This helps to balance the flavors.

How to Make Peppermint Rice Krispie Treats
STEP 1: I have a 16″ large stainless steel bowl that is perfect for making Rice Krispie treats. (It’s actually crazy how much I use this bowl!) Combine the crispy rice cereal with 2 cups of the marshmallows, the white chocolate chips, and the 4 crushed candy canes.
STEP 2: Melt the butter in a large saucepan, then add the remaining marshmallows. Cook this all together until the marshmallows are melted.

STEP 3: Turn off the heat and mix in the peppermint extract and the salt.
STEP 4: Pour the marshmallow mixture over the cereal mixture in the large bowl.

STEP 5: Mix until the melted marshmallows are mixed in completely. You’ll want to work fairly quickly before the marshmallows start cooling off.
STEP 6: Pour the mixture into a greased 9×13″ baking dish. Lightly press the mixture into the dish. Then sprinkle the remaining 2 candy canes over the top, lightly pressing them in.

Tips and Tricks
These treats are very thick, so you will want to make sure your baking dish is at least 2″ tall. Otherwise, they may not all fit in a 9×13-inch baking dish.
These can get pretty sticky when transferring to the baking dish. My favorite way to press them in is to use a piece of waxed paper. You can also spray your fingers with nonstick cooking spray and press them in with your hands.
You can also cut these smaller, if needed. The portion is pretty big as is.

Peppermint Rice Krispie Treats
Ingredients
- 12 cups crispy rice cereal
- 20 oz mini marshmallows divided
- 1/2 cup white chocolate chips
- 4 candy canes crushed
- 10 tablespoons butter
- 1 teaspoon peppermint extract
- Pinch of salt
- 2 candy canes crushed (for topping)
Instructions
- Spray a 9×13-inch baking dish with nonstick cooking spray.*
- In a large bowl, combine the crispy rice cereal, 2 cups of the marshmallows, the white chocolate chips, and the 4 crushed candy canes. Mix to combine.12 cups crispy rice cereal, 20 oz mini marshmallows, 1/2 cup white chocolate chips, 4 candy canes
- In a large saucepan, melt the butter. Add the remaining marshmallows and cook, stirring until the marshmallows are melted. Turn off the heat and stir in the peppermint extract and the salt.10 tablespoons butter, 1 teaspoon peppermint extract, Pinch of salt
- Pour the marshmallow mixture over the cereal mixture and mix until fully combined.
- Pour the mixture into the prepared baking dish. Lightly press the cereal down. You don’t want to compact the cereal, just press it down enough to make an even layer. Sprinkle the remaining crushed candy canes over the top and lightly press to make sure they stick.2 candy canes
- Let the mixture set up before cutting into bars.
