Fresh cucumbers and onions are combined with dill and a tangy dressing to make this easy Cucumber Onion Salad. It’s easy and fast and goes will with so many dinners!

I’m always on the lookout for a good vegetable side dish. We’ve been trying to eat more vegetables, and an easy side dish is always welcome.
Well, this Cucumber Onion Salad is so easy, done in 15 minutes, packed with flavor, and can be made ahead of time.
You can’t beat that!
Ingredients
- Cucumber: English cucumbers are my favorite. You could also use Persian cucumbers.
- Red Onion: I like to use a red onion because the flavor is a little more mild. You could also use a shallot
- Garlic: If you don’t like fresh garlic, use about 1/8 teaspoon of garlic powder.
- Dill: Fresh dill really makes this recipe. In a pinch, you can use dried dill. You’ll need about 3/4 teaspoon of dried dill, or to taste.
- Vinegar: I like apple cider vinegar for this recipe, but feel free to experiment.
- Oil: I use extra virgin olive oil, but avocado oil or vegetable oil will work, as well.
- Sugar: This just adds a little bit of sweetness.
- Salt and Pepper: You can add this to taste. Make sure you do add salt and pepper, though – it can make or break this recipe.
How to Make Cucumber Onion Salad
STEP 1: Prep your veggies. Cut the cucumber into rounds. I like to keep them pretty thin. Cut the onion into half moons, then cut the strips in half. I like the strips of onion, but you can also dice the onion, if desired. Grate or mince the garlic, then chop the dill.
STEP 2: In a large bowl, make the dressing. This is simple – just whisk together the vinegar, oil, sugar, salt, and pepper to taste.
STEP 3: Add your chopped veggies to the bowl with the dressing, and stir everything together to combine. If you aren’t serving it right away, refrigerate the salad until serving.
Tips and Tricks
I like to use an English cucumber because you can leave the peel on. If using a regular cucumber, you’ll want to peel it first.
You can get cucumbers of all sizes. I try to find a medium cucumber, but the beautiful thing about this recipe is that it doesn’t have to be exact.
If you aren’t a huge onion fan, feel free to cut back on how much onion is used. I love onion, so I use the full half, but you can even go down to 1/4 of the onion.
I like to top the salad with a little bit more dill, as well as a sprinkle of salt and pepper.

Cucumber Onion Salad
Ingredients
- 1 English cucumber sliced
- 1/2 red onion sliced into half moons, then cut in half
- 1 clove garlic minced
- 2 teaspoons fresh minced dill
- 1/4 cup apple cider vinegar
- 1 tablespoon oil I used olive oil
- 2 tablespoons sugar
- 1 teaspoon salt
- Pepper to taste
Instructions
- Prep all of the vegetables. I like to cut the cucumbers fairly thin. You want the onions to be bite sized. You can dice them if desired.
- In a large bowl, whisk together the vinegar, oil, sugar, salt, and pepper.
- Add the cucumber, onion, garlic, and dill.
- Stir to full combine and coat the vegetables with the dressing.
- Refrigerate until ready to serve.
