This Soft Caramel Popcorn is a family favorite, with popcorn coated with a soft and sticky caramel mixture. This recipe keeps the popcorn soft and is perfect for movie nights or snacking!

Ingredients
1cup butter
1cuplight brown sugar
1cupgranulated sugar
1/2cupcorn syrup
20-24cupspopped popcorn
1/2teaspoonbaking soda
1/4teaspoonsalt
Instructions
Place the butter in a medium to large saucepan and place over medium heat. Cook until melted.
Once melted, add the brown sugar, the granulated sugar, and the corn syrup. Stir until it comes to a boil. (You don’t want it to come to a boil too quickly, though. You want to give it enough time to dissolve the sugar.) Once boiling, let it boil for 1 minute.
While you are making the caramel, place the popcorn in a very large bowl.
Remove the pan from the heat and stir in the baking soda and the salt. Pour the caramel over the popcorn and stir until coated. (Be careful to not touch the caramel at this point - it is hot!)
Let the popcorn cool for a few minutes before serving.

Recipe from my old roommate DawnIf you are using microwave popcorn, you will need about 2 regular bags. If using an air popper, you will need about 3/4 cup of kernels.
