Ingredients
Waffles
2cupsall-purpose flour
1tablespoonbaking powder
1tablespoonsugar
1/4teaspoonsalt
1 3/4cupsmilk
1/4cupneutral oil
2eggs

1/2cupmilk
2eggs
1tablespoonDijon mustard
3/4cupraspberry jam
8ozshredded gruyere cheese
1/2pounddeli sliced turkey
1/2pounddeli sliced ham
2tablespoonsbutter

Instructions
Preheat a mini waffle maker.*
In a bowl, whisk together the flour, baking powder, sugar, and salt. In another bowl, (or I like to use a large liquid measuring cup to cut back on dishes), combine the milk, oil and eggs. Beat the eggs in the liquid.
Pour the wet ingredients into the dry ingredients, and mix until combined.
Make the waffles according to waffle maker instructions.
Pour the milk into a shallow dish. (I like to use a pie dish.) Add the eggs and Dijon and beat to combine.
1/2 cup milk, 2 eggs, 1 tablespoon Dijon mustard
Assemble the sandwiches. Place the waffles on a surface, and spread 1 tablespoon of jam on each waffle. Sprinkle some of the cheese on 6 of the waffles, on top of the jam, then layer on the turkey and the ham. Add the remaining cheese on top, then place the remaining 6 waffles on top, with the jam side down.
3/4 cup raspberry jam, 8 oz shredded gruyere cheese, 1/2 pound deli sliced turkey, 1/2 pound deli sliced ham
Heat a skillet or griddle and melt the butter. (If your skillet or griddle is too small to cook all 6 sandwiches at once, only use half of the butter.)

Working with one sandwich at a time, dip the sandwich in the milk and egg batter, dipping each side of the sandwich, then place in the hot pan. Let the sandwich cook until golden brown and until the cheese has melted. You may need to cover the pan with a lid or with foil so the cheese will melt before the sandwich gets too brown. Once browned on one side, carefully flip and cook on the second side.
If you can’t grill all of the sandwiches at the same time, use the remaining butter to finish cooking the sandwiches.
Serve the sandwiches warm, dusted with powdered sugar, if desired.

*I ended up getting a waffle maker that makes multiple mini waffles at the same time. If you don’t have one of these, you can use a regular mini waffle maker.
