Ingredients
Cilantro Lime Sauce
1/2cuplightly packed cilantro
1/4cupsour cream
1/4cupmayonnaise
1tablespoonfresh lime juice
Salt and pepperto taste
Pineapple Mango Salsa
1cupdiced fresh pineapple
1mangodiced
1avocadodiced
1/2cupcilantrochopped
1/4cupdiced red onion
1jalapenodiced
Juice from 1 lime

1/4cuplight brown sugar
3tablespoonssoy sauce
3tablespoonsketchup
1tablespoonapple cider vinegar
1teaspoonminced ginger

Instructions
In a blender or food processor, combine the cilantro, sour cream, mayonnaise, and lime juice. Season to taste with salt and pepper. Process until smooth. Transfer to a bottle or bowl, then refrigerate until needed.

In a bowl, combine the pineapple, mango, avocado, cilantro, onion, jalapeno, and lime juice. Taste and add salt as needed.

Heat a large skillet over medium high heat and add the pork. Cook, breaking it up as it cooks, until the pork is cooked through.

Add the brown sugar, soy sauce, ketchup, apple cider vinegar, ginger, and garlic. Stir to combine, and let it cook down for a few minutes.

To serve, heat the tortillas. Add some of the pork to each tortilla, then top with the salsa and drizzle with the sauce. Serve immediately.
