Ingredients
1poundground chicken
1 1/2tablespoonsbutter
2tablespoonsflour
3/4cupchicken broth
4ozcream cheesecubed
1(4 oz) canchopped green chiles
2cupscilantro leavesroughly chopped
8fajita sized flour tortillas
Chopped cilantro, sliced avocado, and crumbled queso frescofor serving
Instructions
Place a nonstick pan over medium-high heat. Add the chicken and cook, breaking it up, until browned and cooked through.* Once cooked, remove the chicken to a bowl. Return the skillet to the heat.
1 pound ground chicken
Add the butter to the skillet. Once melted, sprinkle in the flour. Whisk together and cook for a minute or two. Then whisk in the chicken broth, cooking until slightly thickened.
Add the cream cheese to the skillet and continue to cook, whisking constantly, until the cream cheese is melted. This will take a few minutes.
4 oz cream cheese
Stir in the green chiles, then the cilantro.
1 (4 oz) can chopped green chiles, 2 cups cilantro leaves
Add in the cooked chicken. Cook until everything is heated through.
Heat the tortillas in a dry skillet, or over a gas flame if you have a gas stove.
8 fajita sized flour tortillas
To serve, add some of the creamy chicken chicken to each tortilla, then top with more cilantro, a couple slices of avocado, and queso fresco.
