Instructions
In a small jar, combine the oil, vinegar, lemon juice, mustard, honey, and garlic. Place the lid tightly on the jar and shake to combine. Taste, and season to taste with salt and pepper. Refrigerate until needed.
1/2 cup oil*, 1/4 cup red wine vinegar, 1/4 cup fresh lemon juice, 1 tablespoon Dijon mustard, 2 teaspoons honey, 1 clove garlic, Salt and pepper
To make the salad, place the lettuce in a large bowl. If desired, layer each of the toppings in a row, or you can just add them all to the top, or even mix them all into the lettuce. Sprinkle chives over the top, if using.
12 cups chopped lettuce**, 12 oz cooked chicken, 8 oz bacon, 3 hard boiled eggs, 1 avocado, 3/4 cup diced tomatoes, 1/2 cup crumbled bleu cheese, Chopped chives
Serve with the dressing on the side, or toss the dressing with the whole salad.
Notes
*You want a neutral flavored oil. I like to use avocado oil. But vegetable oil will work, as well. Olive oil is a lot stronger, but if you prefer that flavor, you can use olive oil.**I like to use a mixture of romaine and iceberg lettuce. Feel free to use one or the other, or any mix of lettuce you’d like. A crisp lettuce is best.Time to make this salad will depend on what you already have on hand. I usually use leftover chicken, and often have hard boiled eggs on hand, so it can come together really quickly. But if you have to cook the chicken, bacon, and eggs, the time will be longer.Nutrition information provided as an estimate only. Various brands and products can change the counts.
