Take grilling season up a notch with these BBQ Pork Kabobs with Pineapple. Chunks of pork are marinated, then grilled with fresh pineapple and bbq sauce for a flavor packed, low effort dinner.

Marinade
1/4cupsoy sauce
3clovesgarlicminced
2tablespoonsbrown sugar
1tablespoonolive oil
1tablespoonrice vinegar
1/2teaspoonred pepper flakes
Kabobs
3lbcenter cut pork lointrimmed
1fresh pineapplecut into chunks*
Sauce
3/4cupprepared bbq sauce
3tablespoonssoy sauce
1/4teaspoonground ginger
Instructions
In a bowl or in a ziplock bag, combine the soy sauce, garlic, brown sugar, olive oil, vinegar and red pepper flakes. Mix to combine.

Cut the pork loin into 1-inch cubes. Add the pork to the bag with the marinade. Refrigerate for 3-4 hours, turning as often as possible.

Turn on a grill to medium heat. Let it preheat while assembling the kabobs.
Remove the pork from the marinade. (Discard any remaining marinade - there shouldn’t be a lot.)
Thread the pork and the pineapple onto metal skewers. I will usually do two pieces of pork, then one piece of pineapple.

In a bowl, combine the bbq sauce, soy sauce, and ginger.
Place the kabobs on the grill and baste the top with the bbq sauce mixture. Close the lid and cook for 5 minutes. After 5 minutes, turn the kabobs and brush with the sauce again. Close the lid and cook another 5 minutes. Turn the kabobs one more time, brushing with the remaining sauce. Close and cook for 5 more minutes. Check the temperature of the pork - remove once it hits 145ºF.
Notes
*You may not use the whole pineapple.
