Ingredients
12ozwhite breadcut into 1-inch cubes
8ozbacondiced
3/4cupdiced onion
1/2cupdiced celery
1/2 - 1finely diced jalapeño
1 1/2cupschicken stock
1cupprepared bbq sauce
1egglightly beaten
Instructions
Preheat the oven to 375°F.
Place the bread cubes on a large baking sheet. Bake until lightly toasted, about 12 minutes, stirring once halfway through.

Meanwhile, heat a large skillet over medium-high heat. Add the bacon and cook until crisp. Remove with a slotted spoon to a paper towel lined plate.

In the same skillet, add the onion, celery and jalapeño. Cook until softened, about 5 minutes. Remove from the heat.
3/4 cup diced onion, 1/2 cup diced celery, 1/2 - 1 finely diced jalapeño
In a large bowl, combine the chicken stock, bbq sauce and egg. Add in the bacon and the sautéed vegetables, then stir in the stuffing mix. Pour into a greased 9x13-inch baking dish.
