Ingredients
8-10slicesbacon
1tablespoonolive oil
3/4cupdiced yellow onion
2poundsground beef
3/4cupItalian breadcrumbs
2large eggslightly beaten
6tablespoonsketchupdivided
2tablespoonsspicy mustard
1tablespoonWorcestershire sauce
1teaspoonsalt
1/2teaspoonpepper
Several dashes of hot sauce
Instructions
Preheat the oven to 350ºF.
Line a baking sheet with foil or parchment paper. Place the bacon on the baking sheet. Bake in the preheated oven for 13 minutes. Remove the bacon to slightly cook, but keep the oven on.

While the bacon is baking, heat the olive oil in a skillet. Add the onion and cook until soft. Remove from the heat to cool slightly.

Line another baking sheet with foil and spray lightly with nonstick cooking spray.
In a large bowl, combine the ground beef, bread crumbs, eggs, 3 tablespoons of the ketchup, the mustard, Worcestershire sauce, salt, pepper, and hot sauce. Add the cooked onions.

Thoroughly mix the ingredients, being careful to not overmix. (I think this is easiest to do with my hands.)
For the mixture into a loaf shape on the prepared baking sheet. Brush the remaining 3 tablespoons of ketchup over the loaf.
When the bacon is cool enough to handle, lay the bacon slices over the meatloaf, trying not to overlap too much, and tucking the ends under the meatloaf.
Bake in the oven for 50-60 minutes, or until the bacon on top is browned and the meat registers 165ºF in the center.
Transfer the meatloaf to a serving plate and cut into slices to serve.
