Ingredients
Dressing
1/2cupred wine vinegar
2tablespoonshoney
1tablespoonDijon mustard
1teaspoondry Italian seasoning
2clovesgarlicminced
Salt and pepper
1/2cupolive oil
Salad
1cupditalini pasta
3cupschopped romaine hearts
1can15 oz chickpeas, drained
1jar7.5 oz marinated artichoke hearts, drained and chopped
1cupgrape tomatoesquartered
1cupcubed salami
1cupcubed Provolone
3/4cupchopped cucumber
1/2cupmini pepperoni
1/2cupsliced green onions
Pepperoncini peppers
Instructions
To make the dressing, combine the vinegar, honey, mustard, seasoning and garlic in a blender. Season with salt and pepper. Blend to combine. Slowly stream in the olive oil to emulsify. Alternately, add all the ingredients to a jar and shake until completely combined slightly thickened.
Bring a pot of salted water to a boil. Add the pasta and cook until al dente. Drain and cool.
In a large bowl, combine the romaine, chickpeas, artichoke hearts, tomatoes, salami, provolone, cucumber, pepperoni and green onions. Add in the cooled pasta. Add in the dressing and toss to coat.
Serve the salad topped with a few whole pepperoncini peppers.
Notes
If you don’t have a blender to blend the dressing, you can add all of the ingredients to a large jar with a tight lid and shake it until is has slightly thickened.Nutrition information provided as an estimate only.
