Ingredients
1/2cupmayonnaise
1/2cupplain Greek yogurt
1teaspooncurry powder
1tablespoonlemon juice
1 1/4cupscookedshredded or cubed chicken
1cupsliced red grapes
3/4cupchopped pineapple chunks
1/2cupchopped celery
1/2cupslivered almonds
1/4cupshreddedsweetened coconut
Lettuce leavesfor serving
Instructions
In a large bowl, combine the mayonnaise, yogurt, curry powder and lemon juice.
Add the chicken, grapes, pineapple, celery, almonds, and coconut. Stir to combine.
Refrigerate for at least an hour, or overnight if possible.
Serve on whole lettuce leaves.
