Ingredients
Dressing:
1/4cupwhite sugar
1/2cupfresh lemon juice
2teaspoonsgrated onion
1teaspoonDijon-style prepared mustard
1/2teaspoonsalt
2/3cupvegetable oil(or other neutral oil)
1tablespoonpoppy seeds
Salad:
1-2heads romaine lettucetorn into bite-sized pieces
4ozMonterey Jack cheesecubed
1cupcashews
1/4cupdried cranberries
1applecored and diced
1pearcored and diced
Instructions
To make the dressing:
Combine all of the ingredients in a jar with a tight fitting lid and shake vigorously until blended.
1/4 cup white sugar, 1/2 cup fresh lemon juice, 2 teaspoons grated onion, 1 teaspoon Dijon-style prepared mustard, 1/2 teaspoon salt, 2/3 cup vegetable oil, 1 tablespoon poppy seeds
To make the salad:
Combine the lettuce, cheese, cashews, cranberries, apple and pear in a large bowl. Toss to combine.
1-2 heads romaine lettuce, 4 oz Monterey Jack cheese, 1 cup cashews, 1/4 cup dried cranberries, 1 apple, 1 pear
Pour as much of the dressing as desired over the salad just before serving. Toss to coat.
