This Tuscan Salmon gives you all the flavor, in just 30 minutes! Salmon filets are cooked and served in a creamy sauce with sun-dried tomatoes and spinach. This is perfect for date night at home, or even just as a fast weeknight dinner!

Ingredients
4(6 oz each)salmon fillets
1teaspoonsea salt
1teaspoongarlic powder
1/4teaspoonpepper
1-2tablespoonsextra-virgin olive oil
1/2cupdiced onion
1/2cupsun-dried tomatoes in oildrained
1tablespoonminced garlic
1 1/2cupsheavy whipping cream
1/2cupfreshly grated Parmesan cheese
1teaspoonpaprika
1teaspoonItalian seasoning
2cupsbaby spinach
Instructions
Season the salmon on both sides with salt, garlic powder, and pepper.
Heat the oil in a large skillet over medium to medium-high heat. Add the salmon (working in batches, if necessary), and cook, flipping once, until the internal temperature is 145ºF on an instant read thermometer. This will take about 3-5 minutes per side. Remove from the skillet to a plate and cover to keep warm.
1-2 tablespoons extra-virgin olive oil
In the same skillet, add the onions and sun-dried tomatoes. Sauté for a few minutes, until the onions are tender. Stir in the garlic and cook another minute.

Reduce the heat and stir in the cream, parmesan cheese, paprika, and Italian seasoning. Cook for a few minutes, stirring regularly, until slightly thickened.

Add the spinach and cook until the spinach has wilted down.
2 cups baby spinach
Remove the skillet from the heat and add the salmon back in. Cover with the sauce and serve.
Notes
If needed, cook the salmon filets in two batches. This will add to your overall cook time, but you don’t want to overcrowd the fish.We like a lot of sauce, but if you don’t want as much sauce, you can cut the cream down to 1 cup.Nutrition information provided as an estimate only.
