Ingredients
Pan drippings from turkey
2cupschicken or turkey broth*
1/4cupbutter**
1/4cupflour
1/4cupmilk
1tablespoonWorcestershire sauce
1tablespoonfresh chopped herbs***
Salt and pepperto taste
Instructions
Once your turkey is done, remove it to a cutting board and cover with foil to let it rest. Carefully pour the drippings in the pan through a sieve. Let the drippings sit for several minutes until the fat separates. Skim the fat from the top and pour the drippings into a large liquid measuring cup.
Add enough chicken or turkey broth to the drippings to equal 2 1/2 cups. Set aside.

Melt the butter in a medium saucepan over medium heat. Add the flour and whisk until the mixture is golden brown. I like to whisk this for a couple of minutes.

Slowly start to whisk the drippings/broth mixture into the flour and butter mixture. Whisk constantly as your add the liquid.
Once the broth and drippings have been added, whisk in the milk, Worcestershire sauce, and the herbs.
Continue to cook, whisking constantly, until the gravy is thickened to your liking, about 5-10 minutes. Taste and season with salt and pepper, to taste.
Salt and pepper
Serve the gravy warm. It will continue to thicken as it cools.

*With my turkey recipe, I don’t usually get a large amount of drippings. You may need more or less than 2 cups of broth. Just make sure that the drippings and the broth together equal about 2 1/2 cups.**You can replace some of the butter with some of the fat from the drippings.***I like to use the same herbs that I roasted the turkey with, so typically thyme, rosemary, and sage.If your turkey is large, or if you like a lot of gravy, I would suggest doubling the recipe.Nutrition information provided as an estimate only.
