Ingredients
Dressing:
1/4cupapple cider vinegar
1/4cupolive oil or avocado oil
1tablespoonmaple syrup
1/2teaspoonDijon mustard
Salt and pepper
Salad:
8cupsmixed greens(about 8 oz)
1applesliced thin
1/2cuppomegranate seeds
1/2cupcrumbled blue cheese
1/2cupdried cranberries
1/2cuptoasted pecansroughly chopped
Instructions
In a small jar with a tight fitting lid, combine the apple cider vinegar, oil, maple syrup, and mustard. Season to taste with salt and pepper. With the lid on tight, shake the dressing until very well combined.

Place the greens in a large salad bowl. Pour the dressing over the greens, and toss to combine.

Add the apple, pomegranate seeds, blue cheese, dried cranberries, and toasted pecans to the salad. Toss just before serving.
